You can't go wrong with a quiet candlelit dinner. Use chicken for the meal, you can make many easy things with chicken and still have it look like you toiled in the kitchen for hours. For example make lemon herb chicken, put 4 boneless chicken breasts in a baking dish, put in about 1/4 cup of lemon juice and about 1 table spoon of butter. It will only take about 40 min to cook at 350 degrees. After about 20 min turn them over and if the pan is drying out add a little water to it, also after you turn them sprinkle a bit of rosemary over each piece and cook for the remaining 20 minutes. Make sure it is completely done inside before you serve it you don't want to make him sick. Also you can put lots of sides such as pasta or a salad. As far as mood goes it will be candle lit and maybe play some soft piano music like Mozart or something.

Hope this helps and congrats on the anniversary.
