You're thinking of the flat worm or Planaria. A very basic organism with some very unique qualties. Not only do heads grow back; if you split their head lengthwise it will develop into two individual heads.

An yes, they do remember. In one experiment biologist would turn on a light and then three seconds later induce a mild electrical shock in the worm. The worm would "cringe" or recoil. After a time they cut the worms in half and the new head grew. They tried the same experiment but without the electrical shock. Three seconds after turning on the light the new worms would "cringe" or recoil.

As gruesome as this may sound. The biologists took the experiment a step further. They did the light on, three seconds and then a mild electrical shock. Then they ground the worms up and fed them to other flat worms. They then did the same experiment without the electrical shock; sure enough the new worms would "cringe" or recoil.

The planaria is quite an amazing animal.
