bread without air pockets in it would be very hard, which wouldn't make for a pleasurable eating experience. at some point in history people found that putting yeast in bread (god knows how they did that..) makes it full of air and soft and puffy when baked. It's just a better way to prepare your food.

because if baked before it is allowed to rise it would be hard as a rock. the yeast that is added to bread helps it rise by creating
tiny air pockets.

You leave the bread to rise to give the yeast a chance to expand and make the bread light and airy..

It rises while it is being baked because of the yeast that you put in it.
