A beginner serious reader? I assume you mean intellectually-challenging and all-around classics?

The Bible
The Iliad and the Odyssey by Homer
The Republic, by Plato
Crime and Punishment by Dostoevsky
The Aeneid, by Virgil
A Tale of Two Cities, by Charles Dickens
Gulliver's Travels, by Jonathan Swift
The Decline and Fall of the Roman Empire, by Edward Gibbon
War and Peace, by Leo Tolstoy
The Bhagavad Gita, author unknown.
The Pensées, by Blaise Pascal
Shakespeare's plays
The Greek Myths, by Robert Graves
The Prince, by Nicholo Machiavelli
Don Quixote, by Cervantes

As for an encyclopedia, the Encyclopedia Britannica is still one of the best.
You've got stuff in that list to keep you busy for years. These are some of the deepest, most challenging books ever written. Reading those carefully will certainly set you on your way to become a classically-trained intellectual.

The Chosen, Chaim Potok
The Promise, Chaim Potok
We the Living, Ayn Rand
The Anthem, Ayn Rand
The Night Trilogy, Elie Wiesel
Animal Farm, George Orwell
Falling Leaves, Adeline Yen Mah
The Merchant of Venice, William Shakespeare

Well, those are eight books that mostly either delve into the psychology subjects or the autobiography pictures, each which paint a beautiful picture. Are they "the most famous?" Probably not, but you could look in the Arts section of your newspaper for what people think is the "top best sellers" as according to the New York Times. But if you want to learn about the self a life, well, what a group of "beginner's books" to do so.

I'm not sure about encyclopedias, but for your fantasy wing you have to have

Lord of the Rings
King Fortis the Brave
Harry Potter
Chronicles of Narnia
Eragon

If you can only have five fantasy books/series those are the ones you must have
