You can use iDUMP, a software that allows you to transfer your songs of your iPod to a PC. Connect your iPod and run iDump and you'll have access to all your songs, select the songs you want to transfer then pick a destination directory and how you would like your songs to be named. And then sit back and transfer all the selected songs to the PC. After that you can already add them in your music library in iTunes. It is easy to use. =)
The good news is iDump is FREE! Here is the link where you can download the software.

Get a program like PodPlus. Usually, you can't get songs from you iPod onto your computer without a program like this. Download PodPlus or a similar program from www.download.com.

First you have to download the music to our computer media player (obviously)
Next you plug in the iPod and click syncronize (sync) button.
All the songs should be put on your iPod

Have ITUNES set to use your IPOD as a harddrive (alternativly you can CAD the Ituneshelper (processes)) and then click tools, folder options, view, show hidden files and folders. Your music is in a folder called... music.

the ipod mounts as a disk image,,,, you can nav down their crazy folder structure and find all the music, but the structure is seemingly random.
itunes can import all the files and put them back into a reasonable album/artist order.
