Salt, gold, iron ore, lead, slate, coal, limestone. These are among many items the colonists would have been searching for.
All mining is not done below ground, some is done on the surface.

The colonies were the raw materials depot for their mother countries. In the original 13, a few colonies (like Virginia) were started as mining colonies for gold (you might notice, that didn't go so well, no gold in Virginia). Other colonies mined small amounts of minerals, but the colonies mainly focussed on timber, tobacco, furs, and other agricultural items.
