Waldorf Apartment Hotels (www.waldorf.com.au) have one and two bedroom apartments that you can rent by the week. They have four or five places scattered around Sydney, but the best one is the one in the Central Business District - it has a rooftop pool. I have stayed in three Waldorfs in Sydney and all of them were great.
They generally have washer and dryer in the units, full kitchen, nice bathrooms, and sleeper sofas as well as a nice bedroom (or two if you get a two bedroom unit).

There's this apartment hotel called Waldorf, www.waldorf.com.au . I stayed there on my last visit to Sydney and it was fabulous.
