Don't over-explain things or add in fluff, odds are anyone reading it will take that as an excuse versus a statement of fact (the fact that you're simply not in the office).
Here's one:
I will be out of the office on _(date)_ _(to observe holiday/for vacation/etc). I will return on _(date)_. If you need assistance in my absence, contact (Contact of coworker who handles stuff in your absence, assuming you have permission to refer tasks to them).

I am sure that people will respect the fact that you are honest and dedicated to your heritage.
I would suggest you use "in respect to the Jewish holiday of Yom Kippur, I will be out of the office......
