I have two white wires and a red wire coming from the ceiling and a black wire and a white wire from the fan. Should I connect the white wire from the fan to both white from the ceiling and black from fan to red from ceiling?

I would expect a black, white, and red. The 2 white and red you mention are coming out of one cable? Maybe paint on the wires makes you think there are 2 whites. What was hooked up there before you started? If you removed a light, how was it connected? It is very important not to get the wires mixed up. The black and red could be always hot and switched hot, or if you have 2 switches already they could both be switched for fan and light control. If you can't figure out which is the black wire, I suggest you call an electrician.

Someone may not have wired right. What I do when it doubt I find a good ground and run a wire up toward the ceiling. Then I use my meter to see which wire is hot. If I am sure that a recepticle is wired properly then I stick a bared end of a wire into the wider slot of the recepticle and clamp the other end end to my meter, then I thouch the wires I am in doubt of with the other probe. There are simpler devices,but all I have is a meter.
