Use Crayola modeling compound, because it's really easy to work with, and make something that looks the following:

The first thing I thought of was cauliflower. I don't know how long it will "last" before it starts to go bad.

I think some of the other suggestions of clay and playdough are good. You don't have to worry about smell or mold.

Interesting project- good luck with it.

Buy a playdough set and mush all colors together.
Squish playdough through one of those toys that come with it, one that makes tubular shapes.
Coil strands of playdough in brain-fashion around each other into a brain-shaped conglomerate of dough-strands.
Ta-Da!
(Don't forget a thick piece at base for brain stem.)

i guess u can use clay...use modelling clay and make it into a big ball like the shape of a brain and try making crooked lines through it to show the way it looks.

Speak to your local butcher and get some sausage skins and fill it with oatmeal.

We used to use spaghetti or pasta cooked and stick it together with something! It is very convincing!
