Well a person turns blue while choking because carbon dioxide is building up in their blood. If we assume (watch out for that old saying) that the smurfs are blue because they are actually a life form that uses carbon dioxide the way humans use oxygen (they are magical after all), then their resperation would be CO2 in oxygen out. If you choked them this would cut off this exchange, thus leading to a build up of oxygen. This would then turn the smurf red.

I would think first the smurf would turn red and then the combination of red and blue would cause the chain effect of color which would produce the color purple. So my final answer is purple.
