i have watched the test matches and all the international teams seem to have them on there international shirts

It's the number test player they are for England. It's also shown on the side of the cap. So if Flintoff's number is 1234, it means he's the 1234th player to represent England at test level. They started it about 10 years ago.

I know that the aussies have the number corresponding to their place in the order of players to represent Australia - eg someone with 326 will be the 326th person to play cricket for their country.

I think England is probably the same

The number underneath the team logo means the player number to be Internationally picked to play for there country. All teams have this I think.
