Could someone give me a link to some resources that discuss the various adapatation of the Mahabharata and/or Ramayana epic into various cultures.

Indonasia, Thailand, Combodia are such cultures.
Indonasia still has Ramayana and Mahabharata plays conducted. They consider it a part of their own culture.
Combodia still has the largets Vishnu temple in the world(Ankorvat). Its walls has paintings from Ramayana and mahabharata.
Thailand also we see same culture.
Apart from that People from all continents and many countries in the world have taken up Bhagavad Gita which is part of Mahabharat and Chanting the name of Krishna, Rama. There are many ISKCON temple all round the world.
