Try the Mussel Inn on Rose Street for great, fresh sea food (its run by fishermen) or try Sweet Melindas in Marchmont, which is cozy, friendly and Scottish. Black Bo's is the best Vegetarian, while for Indian food the Raj or Brittania Spice are excellent.

The Witchery is Edinburgh's most famous restaurant and is supposed to be the best, but I think you have to book ages in advance.
For Indian, I've heard that Suruchi on Nicholson Street is one of the best. Or try Anna Purna near the university for vegetarian.
I recommend Eighty Queen Street - a jazz restaurant with great food & great atmosphere.

Edinburgh's full of delicious restaurants, go down to Leith for a nice stretch of eateries along the river, it's very scenic and a nice place to visit.

The Witchery is the best one at which I've eaten...and on the grounds of where a coven used to live and sacrifice, I think. As you walk to the Castle on the Royal Mile, it's on the left, I think across from the Whiskey Heritage Centre.

please don't think i'm joking. but when ever i'm there i always go to "Dirty Dicks" on Rose Street, famouse for there fantastic steak and ale pie, might not be your taste but it's a nice venue, and other things on the menu,
