. WATER: The main ingredient!

2. MALT:
Malt is barley which has been moistened, allowed to germinate and then dried. Colour and flavour of beer is affected by the type of barley used, how long it is allowed to germinate, and the temperature at which it is dried. Some new styles of malt are roasted to varying degrees to produce a range of specialty malts such as caramel, crystal, chocolate and black malts. These malts affect colour and flavour, depending on the quantity used.

3. HOPS:
Hops, like the grapes used in wine are “varietal” in nature. This means that brewers select their hops from specific growing areas around the world, and among a number of specific varieties cultivated within those growing areas. Some varieties may contribute mainly spiciness (bitterness), while other varieties are prized for their fine aromas.

Hops are often identified with a double name, as follows: Growing Area + Variety. For instance, Hallertau-Hallertauer means the Hallertauer variety grown in the Hallertau growing area (Germany). Tettnang-Hallertauer refers to the same variety, but grown in the neighbouring Tettnang growing area.

4. YEAST:
Is a single-celled organism whose metabolism converts sugar into alcohol and carbon dioxide. One species, Saccharomyces carlsbergensis is used to make lager, and another, Saccharomyces cerevisiae, is used to make ale.

I make my own beer and wine, and enough of it will likely give you a hangover. And I can guarantee you my stuff is all natural and that I don't put any funny ingredients in it to make it last longer, nor are any preservative chemicals used in commercially-made beers than I'm aware of. I don't believe that hangovers are even caused by the alcohol itself, but are rather probably caused by various other chemicals that are also normal byproducts of fermentation. Anytime I've had shots of Everclear (pure grain alcohol) I absolutely never had a hangover the next morning. TO THE FOLKS ABOVE: The only reason pasteurization is done to most beers to make it last longer, is because all the yeast sediment has been filtered out of it. Beer that has been neither filtered nor pasteurized can last for years on the shelf (much like wine) because the yeast displaces and overwhelms any other rogue bacteria that can ruin the beer. The only problem with unfiltered beer is that if the yeast that settles on the bottom gets stirred up, it tends to make the beer taste yeasty and bitter, which is why such unprocessed beer is not ideal for the average Joe Public type of beer consumer.

Lagers are the same ingredients as ales... the difference is that a lager is brewed at lower temperatures and for longer periods of time.

Barley. And lager is fermented on the bottom of the barrel, as opposed to ale which ferments on the top.
