The S3Pro wasn't even the best choice when it was introduced over a year ago: http://www.dpreview.com/reviews/fujifilms3pro/page26.asp
Between the new 30D and the D200, the Canon will give you better image quality in low light situations (ISO 800+), and the Nikon is a better all-around camera.
Regarding lenses and accessories, you can go as crazy as you want with either brand. They both have everything you could ever need, for about the same prices.
With Canon, you can't go wrong with L-lenses.
With Nikon, the 17-35mm f/2.8 and the 70-200mm f/2.8 are stellar for nature photography. Nikon also has some of the best macro lenses in the business.
I have a D200 myself. I love the rugged build quality, the relatively large viewfinder, and the accessibility of the controls. I bought mine before the 30D was announced, but it would still be my choice now. (The 30D dosn't add much over the older Canon 20D)
If you don't need the build quality and features of the 30D/ D200, you can achieve the same image quality with the cheaper Canon 400D and Nikon D80. Again, the Canon is better in low light and the Nikon is the better all-around camera. Oddly enough, the Canon 400D has 10 mega-pixels, versus 'just' 8 on the Canon 30D. Both Nikons also have 10MP. That won't matter much however. You can read more about all of these models at the site I linked to above.

Go with the Nikon! They have better lens support from camera to camera. And Nikon makes a fine camera! I've been using them for 25 years now and they haven't gone wrong!
