INGREDIENTS:
3 eggs
1/2 cup butter, softened
1 1/2 cups white sugar
1 cup buttermilk
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
2 teaspoons ground nutmeg
1/4 teaspoon salt
1/2 cup packed brown sugar
3 tablespoons cream
1/4 cup butter
1 1/2 cups confectioners' sugar

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Lightly grease two 9 inch round layer pans.
In a small bowl beat eggs well. In large bowl, cream 1/2 cup of the butter or margarine and the white sugar until light and fluffy. Mix in the beaten eggs and stir until well combined.
Mix together the flour, baking powder, baking soda, ground nutmeg, and salt. Add the flour mixture alternately with the buttermilk combined with the vanilla to the creamed mixture in three parts, beginning and ending the flour mixture. Spread batter into prepared pans.
Bake at 350 degrees F (175 degrees C) for 25 to 30 minutes or until a toothpick inserted in the center of the cakes comes out clean. Let cakes cool then ice with Caramel Icing.
To Make Caramel Icing: In a medium sauce pan heat the brown sugar, cream or milk, and 1/4 cup butter until it boils. Boil for 2 minutes then remove from heat. Let cool. Stir in confectioner's sugar and beat until smooth. Add more cream or milk or confectioner's sugar as needed to achieve desired spreading consistency. Makes about 1 1/3 cups.

2 teaspoons ground or freshly grated nutmeg
I use freshly ground nutmeg and think it makes all the difference!!!
1 cup buttermilk
Here i substitute buttermilk for 1/2 cup sour cream and 1/2 cup whole milk
Topping
6 tablespoons melted butter
1/2 cup brown sugar
1/4 cup cream
1/2 teaspoon vanilla
1 cup flaked coconut
PREPARATION:
Cream butter, shortening, and granulated sugar; add eggs and vanilla and beat well. Add sifted dry ingredients, alternating with the buttermilk. Beat until well blended. Pour batter into greased and floured 13x10x2-inch baking pan.
Bake at 350° for 25 minutes, or until cake springs back when lightly touched. Combine topping ingredients; spread over warm cake then brown under the broiler, about 5 inches from heat source.

NUTMEG CAKE
1/4 c. butter
1/4 c. shortening
3 beaten eggs or egg substitute
2 c. flour
1/2 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
2 tsp. nutmeg
1 tsp. vanilla
1 c. sour cream or plain yogurt
Preheat oven to 350 degrees. Beat together butter, shortening and sugar. Add and beat eggs. Add flour, salt, baking powder, baking soda and nutmeg. Add vanilla. Blend all together and fold in sour cream. Bake for 40 minutes in foil lined or greased 13x9x2 inch pan.
BROILED FROSTING FOR NUTMEG CAKE:
10 tbsp. melted butter
1/2 c. brown sugar
1/4 c. cream
1 tsp. vanilla
1 c. coconut
Mix all ingredients together and spread evenly onto nutmeg cake. Broil under broiler watching carefully to prevent burning.
Note: Frost can be spread while cake is warm. Frosting should be golden brown color.

Use a Moist White Cake Mix, instead of water use a can of country style or regular apple sauce. Use the oil and eggs as per directions on the box. Add a pinch (1/8 tsp) ground black pepper, and use Nutmeg nuts and grate about a teasp. into the batter.
(Taste the batter to see if you have enough nutmeg)

2 CUPS OF FIRMLY PACKED BROWN SUGAR
2 CUPS OF UNSIFTED FLOUR
A HALF A CUP OF BUTTER
1 TEASPOON OF BAKING SODA
THREE QUARTERS CUP OF SOUR CREAM
1 EGG
1 TEASPOON OF GROUND NUTMEG
HALF CUP OF CHOPPED NUTS
ADDITIONAL SOUR CREAM
Preheat over to 350 degrees. In large bowl combine brown sugar and flour - cut in flour until crumbly.
Press half the mixture on bottom of greased tin, and floured nine inch square baking pan.
Stir baking powder into sour cream. To remaining crumbs add egg, sour cream and nutmeg. Mix well.
Pour over crumb crust. Top with nuts.
Bake 35-40 minutes or until toothpick inserted in centre comes out clean.
Serve warm with additional sour cream.
