sometimes it is the ingredient which goes in to the recipe that contains the additives, hence it does not get listed...meaning the 'flour' you buy at the market for your cake can already contain some of these chemicals.

on the other hand, I have seen quite a few recipes that contain the additive MSG aka. monosodium glutamate. A flavor enhancer. If you look on the back of your purchased food such as soups and sauces you will find it to be a very common ingredient.

Food in the shop has to keep for a certain amount of time without spoiling, so the manufacturers add preservatives, I would imagine that some of the other additives are used to add some goodness that's lost in the process and to improve the taste.

Artificial colouring is used to visually enhance the food. (I wouldn't be surprised if some food glowed in the dark, it's so bright)
If you compare home made tomato soup with shop bought you will see the difference

If you bake bread at home you won't need the additives, will be healthier for it and it will taste much nicer.

Most people prefer home made food because it does not contain additives. Some kinds are dough conditioners which improve quality of baked goods like bread. Lots of homemade bread is heavier than commercial.

I know that bread made with potato starch keeps it from going stale for a few days more.
