MEAT LOAF
1-1/2 pound ground beef
1/2 pound sausage
1/2 onion cut up (save the other half for the other recipe)
1/2 package of crackers crushed in the package (save other half)
1 egg
ketchup
Mix the ground beef and sausage and onion and crackers and egg all together and form into a loaf. Put it in a loaf pan and stripe it with ketchup. Stick it in a 350 degree oven for 60 to 90 minutes. To check for doneness, cut out the center slice after an hour. If anything is still pink, give it a few more minutes.
NOW FOR THE OTHER RECIPE.....
SCALLOPED CORN
1/2 package crackers (remember these)
1/2 onion cut up (this is gonna be good)
1 egg
1 can whole corn (drain it)
1 can creamed corn
Dump all the above into a casserole dish and stir. Dust the top with salt and pepper. Cover it and stick it in the 350 degree oven with the meat loaf. This one takes just about an hour and is a great side dish. Most families include it in Thanksgiving dinner. I can't wait that long.

Here is the Meatloaf I make all the time and my husband and kids love it.
1 pound ground beef
1/4 cup ketchup
1/2 packet dry onion soup mix
3 slices leftover bread (heels are great), torn into bite-size pieces
1 teaspoon Italian-style seasoning
1 tablespoon water
water as needed
Preheat oven to 425 degrees. In a large bowl, combine the beef, ketchup, soup mix, bread, Italian-style seasoning and water. Mix well. Shape into a loaf and place into a 9 inch pie pan OR a 9x13 inch baking dish. Baste the top of the meatloaf with ketchup. Bake at 425 degrees for one hour, or until the edges are just crispy and the top has a crust. Cool for 15 to 20 minutes before cutting.

Yield: 4 servings

8 ounces canned diced tomatoes with juice
1/2 cup quick-cooking oats
Topping:
1/3 cup ketchup
2 tablespoons brown sugar

Preheat oven to 375 degrees F.
Mix all meatloaf ingredients well and place in a baking dish. Shape into a loaf.
Topping:
Mix ingredients for topping and spread on loaf. Bake for 1 hour.
Cottage Potatoes
Prep Time: 15 Cook Time: 30 min
Yield: 4 servings
3 large potatoes
1/4 cup (1/2 stick) butter
1 cup cottage cheese
1/2 onion, diced
Salt and pepper
Paprika
Preheat the oven to 350 degrees F.
Scrub the potatoes, slice them, and put in a pot with water to cover. Boil the potatoes until tender, then drain and mash them with 2 tablespoons of the butter. Add the cottage cheese, onion, and salt and pepper to taste. Stir the mixture gently, and then put in a greased casserole. Dot with the remaining 2 tablespoons of butter and sprinkle with paprika. Bake, uncovered, for 30 minutes.

Sweet and Sour Meatloaf Recipe
1-1/2 pounds ground beef
1 cup dry bread crumbs
1 teaspoon salt
1/4 teaspoon pepper
2 eggs
1 teaspoon instant minced onion
1 15 ounce can tomato sauce, divided in half
Topping:
Reserved half of tomato sauce
2 tablespoons brown sugar
2 tablespoons vinegar
1/2 cup sugar
2 teaspoons prepared mustard
Mix together beef, bread crumbs, salt, pepper and eggs. Add onion and one half of the can of tomato sauce. Form into a loaf . Bake at 350 degrees for 50 minutes.
In a saucepan, combine topping ingredients and bring to a boil. Pour over meat loaf, and return to oven for 10 minutes more.

Chili Cheese Meatloaf Recipe
Ingredients:
1 can (8 OZ.) tomato sauce
1/2 cup catsup
1 pound lean ground beef
2 eggs
1 cup fresh bread crumbs
1 can (7 oz.) whole green chilies
1 (8 oz ) package Jack cheese
Directions:
In a small bowl mix together tomato sauce and catsup. In a large bowl combine ground beef, eggs , crumbs and 1/2 cup tomato mixture. Stuff 4 whole green chilies with half of the cheese cut into strips. Grate the remaining cheese and cut the remaining chilies into strips. In a well-greased 5 x 10 x 3 inch loaf pan, pour half the tomato mixture to cover the bottom of the pan. Spread half of the meat mixture over this evenly. Lay the four stuffed chilies in pairs on top of the first layer of meat. Cover with remaining meat. Pour remaining tomato sauce mixture over top and garnish with cheese and strips of chile. Bake in a preheated 350 F oven for 1 hour. Remove from oven when done and allow to sit for 5 to 10 minutes before serving

Meatloaf

1 Tbs Worschestire sauce
2 Tbs ketchup
1 tsp freshly ground black pepper
1/2 tsp kosher salt
Blend all ingredients thoroughly. Fold in 1 cup shredded sharp cheese (or cheese of your choice).
Shape into a loaf and place in an oven-safe glass pan.
Bake in a 350 F oven for about 50-60 minutes.
Leftover meatloaf sandwiches are fantastic!

2 lbs lean hamburger
1/2 lb italian sausauge (I like the hot kind - deskinned)
1/2 cup chopped up onion
2-3 pieces of bread shredded
one tsp Worchester sauce
one tsp soy sauce
one shake of Italian seasoning, garlic powder, pepper
use water or milk to moisten and mix well. I know my meatloaf will be gone in one to two days and I refrigerate the leftovers so I add 2 eggs too.
(optional - one packet onion soup mix)
Cook at 350 degrees (I use a glass huge meatloaf pan) for 60-75 minutes...my family loves it!

When you remove it from the oven cover with 1 packet of brown gravy mix prepared as directed on package.
Even people who claim they hate meatloaf have eaten my meatloaf and said it was the best they'd ever had.
