PEANUT BUTTER FUDGE:
2 cups sugar
2 Tablespoons light corn syrup
dash salt
3/4 cup milk
1/3 cup creamy peanut butter
1 teaspoon vanilla extract
walnuts, chopped (optional)
Mix sugar, corn syrup, salt and milk together in deep saucepan.
Cook over medium-low heat without stirring until a drop tested in cold water forms a soft ball. (234 degrees)
Cool until side of pan can be touched comfortably.
Add peanut butter, vanilla extract and walnuts. Beat until it loses shine. Pour into buttered pan.

PEANUT BUTTER FUDGE OREO COOKIE PIE
1 Keebler ready-made Oreo pie crust
1 (4oz) box instant French vanilla pudding mix
1 cup cold milk
3-4 tablespoons creamy peanut butter (or more if you like)
1 jar chocolate fudge sauce (Smuckers or Dove)
1 regular container Cool Whip (thawed)
Have pie crust ready. Carefully spread/frost the bottom and sides of pie crust with fudge sauce (if really thick microwave for a few seconds). You won't need to use the whole jar.
In a bowl, blend instant pudding and 1 cup milk using a whisk.
Using an electric mixer, add the peanut butter (mixture will be thick). Spoon onto the fudge layered pie crust.
Top with Cool Whip. Garnish with any Oreo crumbs from the pie crust.
Refrigerate.
This is so quick and easy but everyone thinks it takes a long time because of the taste. Doesn't last long at events.

PREPARATION:
Mix sugar, salt, syrup and milk in pan. Bring to boil slowly.
Cook until small amount forms soft ball in cold water, about 235° on a candy thermometer. Remove from heat, add peanut butter and vanilla.
Do not stir. Cool to lukewarm then beat just until creamy, losing gloss and beginning to hold shape. Stir in nuts if used. Pour into a buttered loaf pan or 8- x 8-inch pan and cool. Cut in small squares.
*To Test for Soft Ball Stage
A small amount of syrup dropped into chilled water forms a ball, but is soft enough to flatten slightly when picked up with fingers (234° to 240°).

4 cups sugar
1/2 cup light corn syrup, or white Karo syrup
2 sticks unsalted butter
1 cup evaporated milk
1 tablespoon pure vanilla extract
9 ounces (1 cup) smooth peanut butter (recommended: Jif)
2 heaping tablespoons marshmallow cream
Lightly grease a 9 by 13-inch pan and set aside.
In a large saucepan, combine the sugar, corn syrup, butter, and evaporated milk. Cook over medium heat, stirring occasionally, until it reaches 242.5 degrees F, between the soft and hard ball stages.
Remove from the heat and stir in the remaining ingredients. Beat the mixture with a large wooden spoon until it starts to get stiff. Pour into the prepared pan and let harden.
To serve, cut into pieces about 1 1/2-inches square and serve.

Don't let the flour turn you off. You won't even notice it. This stuff is addicting.
4 cups sugar
1 (12 ounce) can evaporated milk (not the small can)
1/2 cup butter or margarine
1 (18 ounce) plastic jar marshmallow cream (use fluff, not kraft)
1 (12 ounce) jar peanut butter (not the large jar)
1 cup flour
Boil first 3 ingredients for 10-11 minutes. Quickly add last three ingredients. and stir quickly.
Pour into buttered 9x13 pan and either refrigerate or let set.
