First of all, make sure that the invitations states that email replies are accepted. It should say at the bottom "RSVP by phone or email" or something along those lines.
Then use proper wording, grammar, and spelling for a traditional RSVP.
Example:
"Dear *insert name*,
Thank you for including me to attend your special day. I appreciate the invitation, and I am looking forward to helping you celebrate your wedding.
I will be attending your wedding on *date, time, place*. (If you are bringing anyone besides yourself like a spouse, date, family, list them in the above as "My spouse and I will be attending" or "My date and I will be attending", etc...)
Thank you again for remembering me on this day. I look forward to seeing you there.
Sincerely,
*Your name*
Make you are sending out as formal of wording as you can. No matter how close you are to the couple, this is still a special occasion. You should show respect for it.

If you received the invitation via email, then it is okay to respond with a simple "Sounds great! We'll be there!" Be sure to include exactly who will be there if a date was invited for you.
If you received the invitation in the mail, then DO NOT respond via email. Simply fill out the RSVP card and mail it back.

Depends on how close you are to the person you're sending the email to. If it's a good friend, don't worry about formalities but go with something like 'I'm very excited and can't wait to spend your special day with you'. If the RSVP is going to the parents and you don't know them, thank them for the invitation, tell them you would be honoured to attend and that you look forward to being part of the special day.
Don't forget to be specific about who is attending as they will need to know specific numbers. Eg if the invite is for you and your partner (who is named in the invite), make sure it is clear whether both of you will be attending. If the invite is for you and an unnamed partner, you might want to say that '[John] and myself would love to attend' because it would be useful for them to have a name for the purposes of name cards and the guest list generally.
BTW did they make it clear in the invitation that email responses are OK? Most people have RSVP cards and some people can be quite picky about making sure you use them to reply (as that might their record of who is attending). Again, you need to judge this by how well you know the person and whether they are uptight and formal about things. If you're not sure, err on the side of caution and send a written response.
