SHRIMP SCAMPI
(always been a favorite, and is sooooo simple to make)
1 1/2 lbs shrimp
2 TBS Extra Virgin Olive Oil
2 TBS green onion
1 1/2 tsp each basil, parsley
2 TBS lemon juice
1/4 tsp each s&p
2 cloves garlic
grated parmesan
Heat oil. Cook all ingredients (except parmesan) in oil 2-3 min or
until shrimp is pink and firm. Remove from heat. Sprinkle with parmesan.
Can toss with fettucini
Enjoy!

This is from a restaurant copycat recipe site. I won't swear to its accuracy, but it seems to have the stuff that I'd associate with a good scampi recipe.
Ingredients :
3 tbsp butter, softened
1 tspn minced white onion
1 tspn minced garlic
1 tbsp Chablis wine
6 fresh medium shrimp, butterfly cut - with tails left on
1 tspn lemon juice
½ tspn minced fresh parsley
pinch salt
pinch ground black pepper
pinch crushed red pepper flakes
1 tbsp heavy cream
1 tbsp sliced canned black olives
5 slices Italian bread, toasted
for garnish : 1 diced roma tomato
freshly grated parmesan cheese
Preparation and Cooking Instructions :
Toast the sliced Italian bread on a sheet pan in your oven set to broil, or in a toaster oven. The bread should toast for 1 to 2 minutes on each side, or until light brown. Arrange the bread slices in a spoke-like fashion on a serving plate then dance over to the stove to whip up the scampi.
Heat a small skillet over medium heat. Add 3 tbsp butter to the pan.
When the butter has melted add the minced onion and garlic Make sure your heat isn't up too high or the garlic may burn, and turn brown and bitter. When the onion and garlic have sautéed for just a few seconds, add the wine to the pan.
Immediately add the shrimp to the pan.
After you add the shrimp, quickly add the lemon juice, parsley, salt, black pepper, and crushed red pepper and cook shrimp for 1 to 2 minutes, tossing occasionally.
After a minute or two, when the shrimp is done, add the cream and olives. Cook for 15 seconds or so, then use tongs to place one shrimp on the end of each bread slice (the ends that are in the center of the plate), and place one shrimp in the center of the plate (not on bread).
Pour the sauce from the pan over the shrimp and serve the dish with a diced roma tomato sprinkled over the top and freshly grated parmesan cheese.

that is simple all you have to do isget fresh garli and some butter.....take about 5 or 6 garlic cloves ..that is the ones that break off....mash them and take the peeling of and then chop them......in a pan heat the garlic and some butter and heat til it just start frying do not let it burn... this is what they use for shrimp scampi ...all you need is a spoonful of lemon and 1/4 cup of a white wine,,then pour on your pasta....if you are using the shrimp add shrimp when butter begins to fry and fry until the shrimp turns pink...keep this stir the entire time then add wine and lemon...pour on pasta...garnish with itailian parsley (chopped)

The shrimp give it flavor, so you gotta include shrimp. Also, I don't even care about giving you the recipe, because anyone who liked anything from Olive Garden and wants a recipe for it should be put into a hole in the ground and die.
