BBQ Beef Party Tarts
30 unbaked mini tart shells in mini-muffin pan
1 lb. ground beef
½ cup BBQ sauce
¼ cup finely chopped onion
2 Tbsp. brown sugar
shredded cheddar cheese
Preheat oven to 350ºF. Brown ground beef and drain. Stir in BBQ sauce, onion, an brown sugar. Cook over medium heat until hot and bubbly. Evenly fill unbaked tart shells w/ beef mixture. Bake for 20 minutes until lightly browned. Top w/ shredded cheese, bake 5 more minutes.
Basic Tart Dough
1 cup margarine, room temp.
6 oz. cream cheese (3/4 block), room temp.
2 cups flour
Mix margarine and cream cheese together; mix in flour to form a soft dough. Chill dough overnight.
Preheat oven to 450ºF. Shape dough into 60 walnut-sized balls. Place in cup of mini-muffin pan, and use tart shaper to press dough down into tart shape.
Pierce the shell w/ fork, and bake unfilled for 10-12 minutes. Bake filled tarts as directed on filling recipe.

Frozen Waldorf Salad
1/2 cup sugar
1/2 cup pineapple juice
1/4 cup fresh lemon juice
1/8 teaspoon salt
1 1/3 cups heavy cream, whipped
1/2 cup miniature marshmallows
1/2 cup red seedless grapes, cut in 1/2
1/2 cup crushed pineapple, drained
2 medium apples, diced, skins left on
1/2 cup diced celery
1/2 cup walnuts or pecans, roughly chopped
8 fresh or maraschino cherries
8 sprigs fresh mint leaves
In a saucepan, combine the sugar, pineapple juice, lemon juice, and salt over medium heat, stirring constantly, until thick. Remove from heat and let cool. Fold whipped cream into the cooled syrup mixture. Stir in marshmallows, grapes, pineapple, apples, celery and nuts. Spread mixture into an 8x8” pan and freeze until frozen throughout, at least 2 hours. Remove the salad from the freezer 5 minutes before serving. Cut into 8 squares. Garnish each serving with a cherry and a sprig of fresh mint. These can also be made in muffin tins lined w/ paper muffin cups for individual servings.

Slow-Cooker Potato Soup
4 russet or baking potatoes, peeled, cut into small pieces
2 leeks, coarsely copped (white and light green only)
2 onions, coarsely chopped
3 ribs celery, coarsely copped
4 chicken bouillon cubes
1 (10 ¾ oz) can Cream of Chicken Soup
1 (10 ¾ oz) can Cream of Celery Soup
1 Tbsp. dry parsely flakes
4 cups water
1½ tsp. kosher salt
2 Tbsp. butter
1 (12 oz) can evaporated milk
Garnish: chopped chives
1. Place all ingredients except evaporated milk and chives in slow cooker.
2. Cook on low 10 hours, or on high for 5 hours.
3. Stir in evaporated milk the last hour of cooking time.
4. Garnish each bowl of soup w/ fresh chives.

Creamy Lobster & Spaghetti
Shelled lobster with fresh spinach sauteed with extra-virgin olive oil in a creamy lobster broth.
3 Lobsters (1.5 lbs each)
1½ tsp Dry Thyme
1½ tsp Old Bay seasoning
3/16 tsp Crushed red pepper
1½ oz Extra-virgin olive oil
1½ medium Onion, diced
1½ Tbsp Chopped garlic
1½ cup(s) White wine
1½ pt Heavy cream
9 oz Fresh spinach
7½ oz Roma tomatoes, diced
1½ stick(s) cold Butter, cut into pieces
3 oz Sherry
1½ tsp Salt
3/4 tsp Pepper
18 oz cooked al dente spaghetti (Follow box directions for cooking pasta)
Preparing the lobster:
Boil water in pot large enough to hold the lobsters
Drop lobsters in pot and boil for 3 minutes
When finished cooking, remove lobsters from pot
Twist off the two front claws where they join the body
Using the back of a knife, crack the claws open and remove meat from tail and body and cut in half lengthwise
Season lobster with Old Bay, thyme and crushed red pepper
Preparing the sauce:
Heat olive oil in large pot
Saute onions over medium heat until translucent, approximately 4 minutes
Add garlic and saute another minute, add wine and sherry, salt and pepper.
Add lobster
Bring to boil, cook for 4 minutes
Remove lobster meat from sauce and set aside, cook another 4 minutes
Add cream and bring to a boil for 7 minutes
Strain sauce and add liquid back to the pan
Add spinach and tomatoes and butter and bring to a boil
Add lobster to reheat
Preparing Lobster Spaghetti entree
Partly coat pasta with sauce, transfer to large bowl (or individual dishes), top with lobster and remaining sauce. Serves 6

Everyone loves the tiny pancake that's big on flavor. Make and serve them by the dozen!
Ingredients:
2cups Original Bisquick® mix
1cup milk
2eggs
Methods:
1. Heat griddle or skillet over medium-high heat or electric griddle to 375°F; grease with cooking spray, vegetable oil or shortening. (Surface is ready when a few drops of water sprinkled on it dance and disappear.)
2. Stir all ingredients until blended. Pour by tablespoonfuls onto hot griddle to form dollar-size pancakes.
3. Cook until edges are dry. Turn; cook until golden.

You wanted something special, try this meal...
Chicken and Pancetta Rolls:
4 large chicken breasts
1/3 c. butter
1 clove garlic, crushed
1 tsp oregano
salt and pepper
16 thin slices pancetta or prosciutto
oil
Place each chicken breast between 2 sheets of damp parchment paper and beat out each piece to flatten.
Mix butter, garlic, oregano, s&p. Spread 1/2 mixture over each chicken then lay 4 slices of pancetta on top of each. Roll up, tucking in sides and secure with cocktail sticks. Spread remaining butter on outside of each roll.
Cook under a medium ht, preheated broiler about 15-20 min, turning occasionally, until tender. Slice each roll into 1/2 inch rounds. (The chicken rolls can be sauteed in a skillet also)
Onion Garlic Bubble Bread
1 loaf frozen bread dough, thawed
1/2 c sweet onion, finely chopped
1/2 c butter, melted
2 garlic cloves, minced
1 tsp dried parsley
1/4 tsp salt
Divide dough into 24 pieces. In small bowl, combine remaining ingredients. Dip each piece of dough into butter mix and place in fluted tube pan (sprayed) cover and let rise in warm place, 1 hr until doubled. Bake at 375 for 20-25 min or until golden brown.
Serve with a salad and dessert:
Apple Cake:
1 cup of cooking oil
2 cups of sugar
3 cups of fresh apples (chopped)
1 tsp of vanilla
1/2 cup of raisins
2 cups of self-rising flour
1 cup of broken pecans
3 eggs
1 tsp of nutmeg
1 tsp of cinnamon
Combine the oil, sugar, and eggs and beat them together well. Then add in the flour and continue to beat the mixture well. Now add in the remaining ingredients. Stir until the ingredients are blended together well. Bake in greased and floured 9x13 pan. Cook at 350 degrees for 45 minutes. Then make the sauce.
Ingredients for the sauce:
1/4 stick of butter
2/3 cup of evaporated milk
1 tsp of vanilla
1 cup of sugar
Mix all the ingredients together in a saucepan. Bring to boil for 2 minutes. Now punch holes in top of the cake. Then pour the icing mixture over cake. Let the cake stand for a few minutes then serve. This cake tastes great with scope of ice cream. Enjoy

Roasted Vegetable Soup with Thai Pesto
2 baby eggplants, cut into chunks
2 redbell peppers (capsicum), deseeded, cut in chunks
300g butternut squash (pumpkin), peeled, cut into chunks
1 large sweet potato, peeled, cut into chunks
1 spanish onion, peeled and quartered
2 zucchinis, cut into chunks
2 carrots, peeled, cut into chunks
6 cloves garlic, unpeeled
2 tablespoons olive oil
2 x 10g vegetable stock cubes
3 ½ cups water
Pesto
1 bunch coriander leaves and stems, roughly chopped
1 bunch mint, leaves picked
1 lemon, juice only
2 cloves garlic
2 tablespoons finely grated parmesan cheese
1 tablespoon olive oil
Places vegetables and garlic in two roasting dishes. Toss in olive oil. Bake in a moderate oven (180°C) for 45 minutes or until tender, stirring occasionally.
Remove skin from garlic. Place all vegetables, garlic, stock cubes and 1 cup of water in a food processor. Process.
Return to saucepan, add remaining water, bring to the boil, reduce heat and simmer for 10 minutes.
To make pesto, place coriander, mint, lemon juice, garlic and parmesan cheese in a blender. Blend to combine. Add oil with the motor running. Blend well. Serve soup topped with a spoonful of pesto and enjoy with a crusty wholegrain roll.

Chocolate Lovers Caramel Squares

1 package semisweet chocolate chips -- any kind
2 tablespoons shortening
30 caramel candies
2 tablespoons water
3 tablespoons butter
1 cup peanuts or walnuts
Melt chocolate chips and shortening over pan of hot water. Spread evenly
on bottom of baking pan lined with aluminum foil. Place in refrigerator
until firm; about 15 minutes. Melt caramels, butter, and water over hot
water. Add nuts and spread over chocolate. Refrigerate until firm. Pour
remaining chocolate over caramels. Let set for about 1 hour. Cut into 1"
squares.

Chicken Frado
Ingredients:
1.Boneless chicken….......1 cup
2.Garlic ginger paste........1/2 cup
3.White pepper........….....1/2 teaspoon
4.Salt.........................…...1/2 teaspoon
5.Peprika powder.............1 tablespoon
6. Vineger...................….1 teaspoon
For White Sauce:
1.Musterd paste.............1/4 cup
2.Corn flour...................1 & 1/2 tsp
3.Butter..........................1 oz.
4.Milk............................1 & 1/2 cup
5.Salt & pepper..............1/2 tsp
6.Stock.......................…1 oz.
Method:
1.Take a bowl. Add chicken, garlic ginger paste, white pepper, salt, paprika and vinegar in it. Marinate chicken for 30 minutes at least.
2.Deep fry chicken & keep aside.
3.Add butter in a pan and cook corn flour until it gives sweet smell.
4.Add salt & pepper and then mustard paste.
5.Cook until bubbly. Remove from the fire.
6.Gradually add milk. Cook until thickens.
7.Put chicken in the center of the dish & pour white sauce over it.
8.Serve with boiled & stir fried vegetables & pasta.

lambs fry. fry 500 g lamb livers(prefer smaller ones) corn floured and half cooked . remove . cook 500g Bacon some onions garlic. add livers and stock to bacon mix simmer till you get gravy. goes with anything . mm mmm
