When Constintine created the Catholic Church after the council of Nicea.
In fact Paul never converted from or to anything. What he did was give up the ways of the Pharisees and returned to Torah. Which was the same thing Jesus preached - step away from the Pharisees and return to Torah.

Acts 9:1-43 Saul was on the road to Damascus to bring back the christians to Jerusalem to be killed and was confronted by the risen Lord himself, blinding him, and after three days he was healed of his blindness and was baptized. After awhile, he began his ministry of spreading the gospel to others.
