i just made some from scratch and they just didn't have enough flavor. did i do something wrong or am i too picky?

I don't ever measure anything or use recipes. I just cook the old fashioned way, but I can make some pretty awesome scalloped potatoes. I'll do the best I can.

Sliced potatoes (8-10 med. potatoes)
Diced onion (about 1/2 med. onion)
flour
butter
salt & pepper
velveeta cheese cubed (approx. 1 cup)
Ham cubed (I use Cook's ham steak)
milk
Nature's Seasons Seasoning Blend (made by McCormick) Optional

Start with a layer of potatoes, then diced onion, flour, butter, salt, pepper, cheese, ham. Repeat until 8 1/2" X 11" pan is 3/4 full. (usually about 3 layers). Top w/ milk to the top of the pan.

Sprinkle Natures Seasons over the top for a "lift in flavor". This is a great seasoning to bring out the flavor in many dishes.

Be sure to leave enough room in your pan for it to boil. Place on a foil lined cookie sheet for over-flow.

Confetti Scalloped Potatoes Ingredients (6 servings) 1/2 c Butter or margarine 1/2 c Chopped onion 1 pk Frozen hash brown potatoes, 16 oz. 1 cn Condensed cream of mushroom soup, undiluted (10 3/4 oz) 1 cn Milk (soupcan) 1 c Shredded cheddar cheese (4 ounces) 1 sm Green pepper, cut into strips 2 tb Pimiento, chopped Dash pepper 1 c Cheese cracker crumbs, divided Instructions In a skillet, melt butter over medium heat. Saute onion until tender. Stir in potatoes, soup and milk. Add cheese, green pepper, pimiento, pepper and 1/2 cup of the crumbs. Pour into a shallow caserole; top with remaining crumbs. Bake at 375 for 35 to 45 minutes.

I made these last night . I never measure, so here goes!
Peel and slice thinly enough potatoes to fill up your baking pan(7-8?). Make a sauce with Velveeta and a little milk cooked on low. Make a layer of potatoes,pour a bit of sauce, a sprinkle of chives,a handful of shredded cheddar, plenty salt and pepper. Don't be afraid of the salt- it will be bland without it. Keep layering till you run out of potatoes. Top with more cheddar -and heres the kicker- pour a small carton of heavy cream over all.Bake @ 375f for 45 minutes or until the potatoes are fork tender. Not diet food , but it's good!

SCALLOPED POTATOES

3 tablespoons butter
1 small onion, minced
3 tablespoons all-purpose flour
1 teaspoon salt
1 1/2 cups milk
1/4 pound sharp cheddar cheese, shredded
5 medium potato, peeled and sliced
1/4 teaspoon paprika

Preheat oven to 375 F. In 2-quart saucepan over medium heat, in hot butter, cook onion until tender, about 5 minutes. Stir in flour and salt until blended; cook 1 minute. Gradually stir in milk and cook, stirring constantly, until mixture thickens slightly. Remove saucepan from hear; stir in 1/4 cup shredded cheese. In shallow 2-quart casserole, arrange half of the potato slices; pour half of the sauce on top; sprinkle with half of remaining cheese; repeat. Sprinkle with paprika. Bake, covered 45 minutes. Uncover and bake 15 minutes longer or until potatoes are tender. Makes 6 accompaniment servings.

Ingredients:
20 pounds potatoes
5 cans cream of mushroom soup
5 cans cream of chicken soup
3 cartons (16 oz. size) sour cream
3 large onions, sauteed
2 cups milk
10 pounds canned ham


Directions:

Parboil potatoes with skins on in salted water, covering potatoes. Cut potatoes in small chunks, chop ham, mix all together. Bake at 300 degrees F for 2 to 3 hours

Must be something in the weather... I JUST wrote up how we do ours -- it's in the Sources field (look for my answer, I'm the blue guy who looks like a car at the exit of Turn 12 at Portland International Raceway :-).

Basic premise: slice peeled, raw boiling potatoes into a buttered baking dish; salt and pepper (plus a little grated nutmeg), then pour cream over them till they're about halfway covered. Top with cheese, bake till done. They sort of poach/simmer in the cream and the buttery goodness drips down onto them and it's just heaven. Mmmmmmmm.

Be sure to try it with gruyere cheese, it melts the best and gives the best flavor. And, amazingly, it's really simple.

I make a quick and easy version:

Layer the sliced poatoes in a casserole dish with ham and sliced onion, and lots of salt and pepper. When the pan is full, pour a can of cheddar broccoli soup over the top and sprinkle some cheese on the top. Bake and enjoy!

i like the cheesy ones u buy in the box i think hungry jack makes them but so do alot of other brands good luck
