if you are talking about fresh french fries from fresh potatoes the reason is to keep from turning black and they should be drained and dried before addiing to oil of it can over flow from having water in it and spatter grease everywhere...it is just like putting a couple drops of water in oil you have in a pan on stove when its hot...it spatters

If you have a spare potato around, cut it up. Store half of the pieces covered completely with water, and the other half out of water and see what happens. The ones out of water will discolor. You have to keep cut potatoes in water when you store them overnight, and a lot of restaurants will prep the potatoes in advance. If you're not storing them for long, you don't need to soak them.

Maybe to get the extra dirt or anything that got into the french fries before they get cook. I would not like if the french fires is dirty and has a nasty taste before I cooked it.

Salted water helps remove the surface starch from cutting up the potato. Potatoes won't get brown but a golden color instead. More appetizing.

The only reason is to keep the air off of them. If not the potaot's will oxidize and become discoloured, or somecases...black
