you can use any recipe and leave out the onions and celery. that's not hard.

Bacon Potato Salad
Boil potatoes, cool, peel, cut up.
Fry bacon crisp, cool, chop
hard boil a few eggs, peel and chop into potato mixture.
pour a bit of the still warm bacon grease on the potatoes, not a lot, maybe a couple Tbsp for medium bowl.
Add mayo, yellow mustard stir to mix, taste, adjust salt and add pepper. Olives and any of the stuff like onions, celery, etc. can be added as well.

Easy Potato Salad
The easiest way I know is to get some firm potatoes, the waxy kind. Boil them until cooked, about 15 minutes, and still firm. Let them cool and dice them into 1/2 inch cubes. Mix into a good Mayonnaise (Hellmans perhaps) with some chopped chives and a little salt and pepper. Serve chilled.
Here's a few alternatives.
This is one I discovered in Germany where it's called Kartoffelsalat. I've also had it in Austria.
1 lb potatoes, washed and boiled in their skins.
2 tbsp olive oil
1 small chopped onion (up to you)
1 tsp parsley chopped
2 tbsp wine vinegar
salt and freshly ground black pepper.
Peel the potatoes, if preferred, whilst still hot. Slice into rounds and place on a suitable serving dish. Mix together the olive oil, chopped onion, parsley, wine vinegar, salt and pepper and shake well. Pour the mixture over the potatoes.
This is served sprinkled with salt and chopped salt herring and gherkins.
Try this potato and herb salad too.
4 medium (waxy)potatoes peeled, cooked, cubed and kept warm.
1 tbsp olive oil
2 tbsp wine vinegar
1/2 tsp salt
good grinding of black pepper
1/2 tsp oregano
1/2 tsp marjoram
1/2 tsp thyme
6 large spring onions finely diced for garnish
I think Americans call them scallions but I'm in England where they're spring onions.
Place the cooked and cubed potatoes in a large salad bowl. Mix together the olive oild, wine vinegar, seasoning and herbs and pour over the warm potatoes. Stir carefully to coat the potatoes and leave to cool. When cold garnish with the spring onions.

Our family does not like regular potato salad, so we found this one from Rachel Ray on the Food Network. It was a hit at 4 picnics this year. We love it.
Potato Salad with Sweet Peppers:
16 new red potatoes
Coarse salt, for boiling water
1 red bell pepper, seeded and chopped
1/2 red onion, chopped
1/4 cup chopped flat-leaf parsley, a couple of handfuls
3 tablespoons red wine vinegar, eyeball the amount
1/3 cup extra virgin olive oil, eyeball the amount
Salt and freshly ground black pepper
Place red potatoes in a pot and cover with water. Place pot on stove, cover and bring to a boil. Liberally salt water with coarse salt. Place a colander over boiling pot. When the potatoes are just tender, about 12 minutes, remove from heat, turn off burner, drain potatoes and cold shock them under running water until just cool enough to handle. Coarsely chop potatoes and return them to the warm pot. Add peppers, onions, parsley and vinegar to the pot. Toss to allow the vinegar to absorb into the potatoes. Add oil and stir the potatoes. Season with salt and pepper, to taste.

When I don't want to make the traditional, fancy potato salad like you mention, I just take cooked instant mashed potatoes, mustard, a teeny bit of mayo, and some dill pickle (or dill relish), mix it all up, voila...instant potato salad.
If you have some hard boiled egg on hand and like it in your potato salad, chop some of that up and put it in there, too.

Potato salad in my house is made with boiled diced potatoes, clerey, onions, peas, shredded carrot, boiled chopped eggs.
Mixed with miracle whip and then paprika sprinkled on top.

boil some potatoes then peel ( the red ones dont need to be peeled if you don't to) & cube & at the same time you can boil some eggs. then peel & dice the eggs. add salt, pepper, a squeeze of mustard. then add enough mayo. so it is not dry & 1 can sliced black olives drained. mix. if you want for looks, you can sprinkle with paprika on top. i forgot you can add a few diced pickles dill or sweet your choice (i prefer dill)

Use equal parts of miracle whip and Hellmans mayonnaise. Use the juices from sweet pickles (add only a lil at a time or you will have potato soup)
Add a lil season all salt
and that's it.

After you cook your potatoes, pour a small bottle of Italian dressing on them, mix it up, then add your mayo/miracle whip. You can add the green scallion onions, they are not too crunchy.

For when i make it i start with the potatoes and add hard boiled eggs. then i add mayo mustard and a bit of ranch and salt and pepper. it always is great and nothing crunchy in it.
