The higher the percentage of fat the tastier the burger. But, most of the fat will melt off, and what size meatloaf you will have after cooking will depend on how much fat drained off. The moe fat in the burg the smaller the loaf.

try ground turkey breast, it is healthier and lower in fat. I use it all the time and it works great if you are making a tomato based meatloaf.

Ground sirloin, it has the least amt. of fat.
Another excellent variation is to get roll sausage like Bob Evans, cut 1/2 of it and mix it in thoroughly to the gr. sirloin or gr. round.
