you can prepare waffle mix tonight and cook it up really fast in the morning. You can also bake some blueberry or other fruit based muffins.You can also prepare a breakfast pizza or a casserole layered w/ toast, cooked sausage, uncooked eggs and cheese, baked tonight and reheated in the morning.

I have found myself eating breakfast foods for dinner for some reason but one of my favorites is some variety of scrambled eggs or scrambled tofu which is then stuffed in a pita pocket with cheese. You can also put it in a spinach tortilla with cheese. The stuffing of the pita/tortilla can be done in the morning after nuker-slaving the eggs. Scrambled egg-beaters doesn't take that long to make and can be done the evening before or that morning. They also (if you are a meaty-tarian) make turkey sausage which is already cooked in grocery stores. This can be added for more protein. If you use jack cheese (I love Colby-Jack cheese) you can put spinach in the scrambled eggs for more vitamins. Just don't use the bagged stuff and wash your own.

Quiche. Muffins. Pancakes. OH, scrambled eggs microwave very quickly and get nice and fluffy. I put an egg in a microwave safe container, add milk, cheese, garlic powder or dill or both and nuke em! While you're nuking, make some toast & pour some juice. Done. This tip can also be used when needing something on the fly to bring to work. You can put all the ingredients together, and nuke it once you get to work.

From my experience, omelettes reheat well. But if you don't want to risk that, you could always just stick with cereal and fruit, which take no time at all to prepare in the morning.
EDIT: The person who said muffins definitely has something there! Muffins are great for breakfast and keep well overnight.

cold cereal is always good. Or you could buy the frozen waffles or pancakes, they only take a few minutes in the toaster oven. Or if you like to cook, scrambled eggs can be made the night before, cover them, put them in the frig and warm them up in the microwave in the morning.
