Yes to both. Freezing looses the least nutrients though. Fresh is best for maintaining most of the nutrients. (Just washing loses some, but hey more dangerous problems if not washed.)

I'm not sure about freezing, but I know that when you boil veggies, they loose some nutrients. That's why steaming them, just a bit is way better.

Freezing well saves everything, but a home freezer isnt designed to freeze, it keeps things frozen, maybe minus 5 or so....blast freezing is awesome....like minus 60....think about something...freeze ground beef in your freezer....then thaw it....always hard in the middle...the reason is your freezer freezes too slowly...from the outside in...so its pushing all the moisture towards the middle...like a lump of ice....so when it thaws you get liquid on the plate...thats all the flavour and nutrients

frozen is best.. when you boil, you drain the water so the nutrients go down the drain as well.... That's what mamma always says...
