Cut Red, White and Yellow Onions and Bell Peppers in Julianas with chopped garlic . Add some salt to help dehydratation. Mix all together and cook it on Med-Hi on a saucepan with extra virgin olive oil on it. Cook it for about two minutes or until you see some transparency.
Add your favorite sausage.
Add some capers.
Garnish with fresh parsley.
Enjoy.

One of my FAVORITE dishes... I'm assuming you're talking about Italian sausages, made with garlic, basil and fennel; be sure to pay attention as to whether you're getting hot or "sweet" (which isn't really sweet, it's just to differentiate it from "hot"). I like the hot ones; my kids only eat the sweet variety.
First, cook the sausages by simmering them in water -- put them in a flat skillet on medium-high heat, add water till they're half covered, and then cook them till the water evaporates, turning halfway through. I like to poke the sausage casings in a few key locations to let the juices out.
While the sausage cooks, slice bell peppers (in any color; the reds will be sweeter, the greens a more "peppery" flavor) into strips, lengthwise; slice an onion also into long strips. Keep them on hand till the sausage is done.
When the water is evaporated, keep cooking the sausages in the same skillet till they're nicely browned, then remove them to a warming oven (I just put them on a heatproof plate in the oven, set to 200 degrees F). Turn the skillet all the way to high, add a couple tablespoons of olive oil, and start sauteeing the peppers and onions.
It seems to work best if you ignore the peppers till they're ALMOST burned -- I love the way they taste when the outside gets very browned, and this works really well if you cook them in the same pan as the sausages. Keep cooking till the peppers are soft and the onions translucent. When they're at that point, put the sausages back in the skillet, add a ladle of marinara sauce (tomato sauce without meat) if you like, stir to mix everything together, and serve with or without pasta.

I either grill or fry the sausages. I'll either fry up some onions with the sausage or fry them separately in a little butter. I cheat with the peppers. I buy a jar of Mancini's Red Peppers and after the onions are cooked , I add the peppers to the onions to heat up.

put the sausage in a frying pan with a lil bit of water steam untill almost done then added sliced peppers and onions and a lil more water if needed and finish steaming untill sausage is done and pepper and onions done also!

first you sautee the onions(fry them in a pan at medium heat) and bell peppers in oil or butter. Sautee for about two to three minutes stirring occasionally. while you are sauteeing them add whatever else you want in there(spices, salt, garlic, pepper ect) when you have sauteed all your veggies for two to three minutes add your sausage. cook for about 2-3 more minutes(stirring occasionally) or until your sausage is cooked all the way through(if the sausage is pre-cooked just cook it until it is hot).

Web addresses for two recipes -- I make mine more like the first one, but I use olive oil -- no butter. I like a mixture of green and red peppers, but most people like red. When you brown the sausage, pierce it with a fork in several places to let excess fat drain out.

i may self like a saimple polish kilbasa, with carmlized sweet onions and what ever color bell pepper i can find on a crust sub roll with a little musterd and katchup
