When you're making potatoes you can make them different every time.. I use salt and pepper for mashed potatoes, and I use ground cumin to make a curried potato. Try experimenting with different spices to see what you like. Potatoes are bland on their own, so be adventerous and try something new!

Au Gratin potatos uses various cheeses, and often just spices thusly:
Potato Gratin with Rosemary and Garlic

This deliciously rich-tasting dish is fragrant with rosemary and garlic.

3 Tablespoons olive oil
3 1/2 pounds all-purpose potatoes (about 10 med size)
2 tablespoons minced fresh rosemary leaves, or 2
teaspoons crumbled dried
6 cloves garlic, peeled and thinly sliced (1/4 cup)
2 teaspoons salt
1/2 teaspoon pepper
1 1/2 cups chicken broth

Place oven rack in upper third of oven. Heat oven to 375*. Lightly grease a 13x9-inch baking dish.
Peel potatoes and slice in 1/8-inch-thick rounds. (You should have about 10 cups.) Layer one third evenly in prepared dish. Sprinkle with one third the rosemary and half the garlic, salt and pepper. Drizzle with 1 tablespoon of the oil.
Repeat with 1/2 of the remaining potatoes, rosemary, and pepper, all the remaining garlic and salt, and 1 tablespoon oil.
Cover with remaining potatoes. Pour broth over top. Brush with remaining 1 tablespoon oiland sprinkle with remaining rosemary and pepper.
Bake uncovered 1 1/4 to 1 1/2 hours until top is lightly browned and potatoes are tender.

Garlic mashed potatos are excellent.
Chili, curry and corriander are often used in preparing potato skins.
Occasionally I like to use Cajun spice instead of salt and pepper on potatos. make it like this:
3/4 cup salt
1/4 cup ground cayenne pepper
2 tablespoons ground white pepper
2 tablespoons ground black pepper
2 tablespoons paprika
2 tablespoons onion powder
2 tablespoons garlic powder
Mix all together and sprinkle.

This is a recipe for Greek Potato Salad; it uses orecano.

2 pounds unpeeled new potatoes cooked and cooled
2 medium yellow onions peeled and slicked very thin
1/2 cup parsley chopped
1/2 cup olive oil
1/4 cup white wine vinegar
2 teaspoons whole oregano crumbled in your hand
Salt and pepper to taste.
After you have cooked the potatoes drain the water.
Cut up potatoes and toss with all the remaining
ingredients. Serve hot or chill and serve the next
day. Serves about 6 to 8 people.

Roasted Mustard Potatoes
Serves 4

Vegetable oil cooking spray
4 tablespoons Dijon mustard
2 teaspoons Paprika
1 teaspoon Ground Cumin
1 teaspoon Chili Powder
1/8 teaspoon Cayenne Pepper
16 Red potatoes

Preheat the oven to 400 degrees.

Spray a roasting pan 3 times to coat with the vegetable oil. Put the mustard, paprika, cumin, chili powder and cayenne pepper in a large bowl. Whisk to blend. Prick the potatoes several times with the tines of a fork and add them to the bowl. Toss to coat the potatoes evenly. Pour the coated potatoes in the prepared roasting pan, leaving a little space between them.

Bake for 45 minutes to 1 hour, until the potatoes are fork tender.

This is also good:
Potato, Cheese and Cayenne Puffs
serves 12

2 cups cold mashed potatoes or sweet potatoes
Salt and freshly ground pepper
1 tablespoon chopped fresh parsley leaves
1 tablespoon chopped fresh cilantro leaves
1 tablespoon snipped fresh chives
2 tablespoons grated parmesan cheese
1 teaspoon baking powder
3 tablespoons milk
2 tablespoons butter
1 teaspoon cayenne pepper
3 eggs -- separated

Potatoes, corn and rice are the principal starchy foods in the Latin American diet -- it is actually difficult to find a meal served without one of them. These simple puffs are good served with roast meat, poultry or fish.

Preheat the oven to 425 degrees. Grease twelve 2 1/2 -inch muffin pan cups or use a greased gratin dish.

Season the mashed potatoes with salt and pepper. Mix in the parsley, cilantro, chives, cheese and baking powder.

Heat the milk, butter and cayenne in a small saucepan until warm and add to the mashed potatoes. Mix in the egg yolks and beat thoroughly.

Whisk the whites to soft peaks and gently fold into the potato mixture.

Spoon the mixture into the muffin cups and bake for about 20 minutes, or until the puffs have risen and are golden brown. Serve at once.

I think you will find that there is no end to the imagination of cooks from around the world. Potatos are a fine everyday food that can be prepared in many ways. Use your imagination and put something together with spices and flavors that you enjoy.

depends on how u want ur potatoes..when roasting i par boil em first with some salt n ,cut onion n pop with em...and maybe some garlic...if mashing just bit salt n pepper ....butter n dash of milk.....though i like some cheese grated too not much...sometimes b 4 i roast em i coat em in a bit of english mustard yummy....

well regular I use some salt pepper and some butter.
if you are talking sweet potatoes then brown sugar maybe Cinnamon or nutmeg
