If you mean POT ROAST, then brown the meat slowly and well; usually about 1/2 hr or so. Add a couple cubes of beef bouillon, or stock. (bouillon has mostly salt, so take that into consideration). Then add a couple of finely chopped onions, a fair amount of ground pepper. AND NO OTHER SPICES.
After the meat is cooked and tender, remove from broth, let sit for several minutes. Mix well some flour and water (wondra flour is best for gravy) and add to the boiling broth slowly, while stirring; cook until thickened the way you want your gravy, taste, add more salt and pepper if needed.
For stews do about the same, but add celery, carrot, turnip, potatoe, tomato,garlic, fennel, cumin, etc.

Cooking roast. To cook a tastie roast you start with garlic POWER sprinkled on heavy first then SEASONED SALT heavy then PEPPER heavy and the Salt It makes a crust on the roast and very good. If cooking a small roast around 3 # go more lightly on the season and add carrets onions celery and 1hour before its done to you liking add potatoes to pot for a real good pot roast in oven or on top of stove.

The term instead of "spices" should be "auromatics". Yes you could call Salt and Pepper spices but the rest are derivitives of auromatics, the fresher the better. Veggies are also a great addition to the flavor.

if u get a good bit of beef don,t do to much to it ...u don,t wanna loose all that natural flavour....maybe a bit of oil n roll it in some mixed herbs.....though i would just cook on its own....then make sure it rests for bout 20 mins after the oven then serve with horse radish sauce n yorkshire puds n fresh veg
