Recipe File: Traditional Chicken Pot Pie
Perhaps there's no comfort food as comforting as a nice hot chicken pot pie. It's also a breeze to make. Chicken Pot Pie is comprised of three recipes: the topping or crust (Pie Crust or Biscuits), Creamed Chicken, and additional vegetables.
Since the topping can be anything fluffy or flaky (I like a basic rolled biscuit top), I won't cover this recipe here.
Let start with the creamed chicken. We'll need two cups chicken broth, 4 tablespoons of butter, 1/2 cup all purpose flour, 1-1/2 cup whole milk, 2 tablespoons sherry, 1/2 teaspoon nutmeg, lemon juice and white pepper.
Cube (or shred) previously cooked chicken into bite size pieces and place on side.
Melt butter in sauce pan or saucier over low heat. Pour flour in and whisk.
After one minute, remove from heat and add 2 cups chicken broth.
Whisk until smooth.
Add milk and whisk over medium heat until simmering. Remove from heat and scrape the sides of the saucepan with a heat-proof spatula. Whisk vigorously to break and chunks and return to medium heat for one more minute.
Turn off heat and mix in chicken & sherry until evenly distributed. Add lemon juice, nutmeg, salt and white pepper to taste.
Now that we have creamed chicken, prepare the ingredients for chicken pot pie: 2 tablespoons butter, 1 chopped medium onion, 1-1/2 cup chopped carrots, 1/4 cup chopped celery, 3/4 cup peas, 3 Tbs. minced fresh parsley. Peas and carrots can be be the frozen kind. Thaw in water and drain.
Melt butter in nonstick skillet over medium heat.
When butter is foaming, add onions, celery, and carrots and cook until tender, about five minutes.
Stir vegetables (including parley and peas) into creamed chicken and pour mixture into baking pan.
Now top with either pie crust or biscuit dough. I usually use biscuit dough because I like the fluffy texture.
After making biscuit dough, cut and layout all the biscuit pieces to cover the pot pie.
Using a pastry brush, brush beaten egg over the surface of the pot pie crust to give it a brown color after baking
After baking for 25 to 35 minutes at 400°F, the crust should be golden brown and the chicken mixture should be bubbling. Your pot pie is now complete and ready to serve.
Chicken Pot Pie
Creamed Chicken
4 Tbs. butter melt combine over low heat combine bring to simmer Scrape sides cook one minute mix in season to taste
1/2 cup all purpose flour
2 cups chicken broth
1-1/2 cups whole milk
3 chicken breast halves, cooked cube
2 Tbs. sherry
1/2 tsp. nutmeg
lemon juice
white pepper
salt
Chicken Pot Pie
2 Tbs. butter melt saute mix pour into 9x13 pan lay on top bake at 400°F for 25 min.
1 medium onion, chopped
1-1/2 cup carrots, chopped
1/4 cup celery
3/4 cup peas
3 Tbs. parsley, minced
2-1/2 quarts creamed chicken
2 cups crust dough

This is amazing! I tried it for the first time last year and it was by far my favorite chicken pot pie. I found it on the back of the Campbells Cream of Potato Soup can. I did make a few changed to it but all that was was I added a little more chicken, and also added more potatoes which I just cooked in a bowl of water cubed up in the microwave first to soften so they wernt still raw when the pot pie was done. But I only did this because my boyfriend likes more hearty meals, it would have been fine to make the original recipe. You can also get the recipe from campbells website. Try it out it was great and easy.

Buy frozen ready-made pie crusts as well as the roll out pie dough for the top of the pie.
Boil some chicken.
Reserve some of the chicken broth.
Shredd or chop the chicken and Season it w/salt & pepper
Place into a pot with 1 LG can of cream of chicken soup
Spoon into the bottom portion of the frozen pie crust.
Cover with the ready made roll out pie dough
Pinch edges to seal
Use fork to poke a few holes at top
Bake at 350 til crust is done

Easy Chicken Pot Pie
1 Can of Veg-All
1 Can Cream of Potato Soup
1 Can Cream of Chicken Soup (or Mushroom)
1/2 Cup Milk
1-2 Chicken breasts, Cubed
2 Tbls. Olive Oil
Salt and Pepper to taste
2 9-inch Deep-Dish Unbaked Pie Crust
Saute chicken in 2 Tablespoons Olive Oil until no longer pink inside.
Add chicken to Veg-All, soups, and milk. Mix together and pour into pie crust.
Place other pie crust on top, cut slits in top, and brush melted butter on top. (Spray butter works great too!)
Bake on cookie sheet at 375 degrees F. for 45 minutes.

CHICKEN POT PIE

10 ounces frozen mixed vegetables
1 small potato, cooked & diced
2 tablespoons butter
2 tablespoons flour
2 cups chicken broth
1 cup Bisquick baking mix
1/2 cup milk
1 egg
Melt butter in a medium size saucepan. Add flour and cook over medium heat, about five minutes. Add chicken broth and heat until mixture just begins to boil. Reduce heat; add chicken, potato and mixed vegetables until heated through. Pour into a 2 quart casserole dish. Combine Bisquick, milk, and egg; pour over chicken mixture. Bake at 400 F. for 30 minutes or until golden.
Serving Size: 4

CHICKEN POT PIE
Ingredients:-
-2 (10 oz) cans Campbell's Cream of Chicken Soup or
-Campbell's Chicken or Turkey Pot Pie Soup
-2 (about 9 oz) packages frozen mixed vegetables, thawed
-2 cups cubed, cooked chicken
-1 cup chicken broth combined with 2 tablespoons flour
-2 Pillsbury pie shells
Method:-
1) Preheat oven to 400°F.
2) Mix soup, vegetables, chicken, and broth. (The mixture should be sort of thick.)
3) Place in pie shell.
4)Bake for 35 minutes until golden. (Cover pie edge if it begins to brown too quickly).

That's not quick. Try this if you really want quick!
Chicken Ala King in a can
Store bought ready made pie crust
2 large potatoes diced and boiled
can of sliced carrots
Put one crust on the bottom of your pie pan.
Fill with all the ingredients. Cover with another pie crust. Crimp the edges together and bake according to crust directions.
Serve with cranberry sauce and hot rolls.

So others gave you a pretty good idea for the filing, but i noticed no one thought of the corn bread rendition. It is much tastier, you can use a cornbread mix, or cornmeal as the crust. I apologize, that I have not added a recipe, but I just wanted to add an extra ingredient to already good recipes.

1 can of cream of chicken soup
1 can of cream of celery soup
cooked shredded chicken
1 large can and 1 small can of Veg-All
1 can of biscuits
Pre-heat oven according to biscuit instructions
Put all ingredients except biscuits in large saucepan and heat on stove. When thoroughly heated, put in casserole dish. Open biscuits and place them on top of mixture. Cook until biscuits are done.
