COCONUT CUSTARD PIE:
2 1/2 cups whole milk
1/2 cup sugar
3 eggs, lightly beaten
1 1/2 teaspoon vanilla extract
1/2 teaspoon salt
1 cup flaked coconut
1/4 teaspoon nutmeg
pastry for one 9-inch pie crust
Combine milk, sugar, eggs, vanilla extract and salt; mix well. Stir in coconut and nutmeg; pour into pie shell. Bake at 425 degrees for 20 to 25 minutes. Shield the crust edge with a pie shield ring or fashion one with aluminum foil and place over edge. Bake at 350 degrees for 15 to 20 minutes longer, until set. Chill thoroughly before serving.

INGREDIENTS:

* 3 eggs, beaten
* 1 1/2 cups sugar
* 1/2 cup butter or margarine, melted
* 4 teaspoons fresh lemon juice
* 1 teaspoon vanilla
* 1 1/3 cups grated coconut (3 ounce can)
* pinch salt
* 1 unbaked pie pastry, 9-inch

PREPARATION:
Preheat oven to 350°. Combine eggs, sugar, butter, lemon juice, vanilla, and salt; mix well. Stir in coconut; pour into pie shell and bake for 30 minutes. Shield the crust edge with a pie shield ring or fashion one with aluminum foil and place over edge.
Bake for 10 to 20 minutes longer, until set and no longer jiggly.
As the pie bakes, a golden topping forms on the surface.
Chill thoroughly before serving. The pie will be gooey if served at room temperature. Serves 6.

Try this

Manchester Tart
Serves 4

600ml (1 pint) Milk
110g (4oz) Shortcrust Pastry
3 tbsp Raspberry Jam
3 tbsp Custard Powder
2-3 tbsp Desiccated Coconut
2 tbsp Sugar

Pre-heat oven to 200°C; 400°F: Gas 6.
Roll out the dough and line a baking dish.
Blind bake (prick with fork and place a piece of greaseproof paper with some baking beans on pastry).
Bake for 15 minutes.
Allow to cool.
Spread the jam over the pastry base, sprinkle with coconut.
Boil the milk and whisk into the sugar and custard powder (follow manufacturers instructions).
Pour into the pastry case.
Sprinkle with coconut or a little sugar, to prevent a skin forming.
Allow to cool before serving.

COCONUT CREAM PIE
1 (9") baked pie shell
2/3 c. sugar
1/4 c. cornstarch
1/2 tsp. salt
3 c. milk
4 egg yolks, slightly beaten
2 tbsp. butter, softened
2 tsp. vanilla extract
1 c. coconut
1 c. sweetened whip cream
Bake pie shell; cool. Mix sugar, cornstarch and salt in saucepan.
Gradually stir in milk, then egg yolks. Cook over medium heat,
stirring constantly, until mixture thickens and boils. Boil and stir
1 minute. Stir in butter, vanilla and 3/4-cup coconut. Pour into pie shell.
Press plastic wrap onto filling. Refrigerate for at least 2 hours,
but not longer than 48 hours. Top with whipped cream and sprinkle
balance of coconut on top

Ingredients:-

-1 c. sugar
-2 tbsp. all-purpose flour
-2 eggs
-1/2 stick butter, melted
-1 c. milk
-1 tsp. vanilla
-1 (6 oz.) pkg. coconut

Method:-

1) Mix all ingredients and blend well.
2) Pour into a 9 inch unbaked pie shell.
3) Bake for 45 minutes at 350 degrees or until crust is brown and custard is firm.
