I put slices of bread underneath meatloaf in pan to absorb extra grease and top the meatloaf with slices of bacon.
SOUPERIOR MEAT LOAF
1 envelope Lipton Recipe Secrets Onion Soup Mix
2 lbs. ground beef
3/4 cup plain dry bread crumbs*
2 eggs
3/4 cup water
1/3 cup ketchup
1. Preheat oven to 350°. In large bowl, combine all ingredients.
2. In 13 x 9-inch baking or roasting pan, shape into loaf.
3. Bake uncovered 1 hour or until done. Let stand 10 minutes before serving.
*Substitution: Use 1-1/2 cups fresh bread crumbs or 5 slices fresh bread, cubed.
SLOW COOKER METHOD: In slow cooker, arrange meat loaf. Cook covered on LOW 6 to 8 hours or HIGH 4 hours. (HELPFUL HINT...Place meat loaf on a piece of cheesecloth, then on a rack to help hold meat loaf together while lifting in and out of slow cooker.)

1 pound of lean ground beef

1/4 worchestershire sauce
1/4 cup chopped onion
2 cloves of garlic, minced
1/2 cup bread crumbs
1. Preheat the oven to 350°.
2. Combine all ingredients, but 1/2 cup of ketchup, in a bowl and mix thoroughly.
3. Put mixture into a greased loaf pan or an 8 1/2 by 11 baking dish and form into a loaf shape.
Take the remaining ketchup and spread across the top of the loaf.
4. Bake in oven for 35-40 minutes.
Mexican Meatloaf
1-1/2 lbs. ground round (or ground beef) 1 med. onion diced
3/4 c. breadcrumbs 1 tsp. granulated garlic
2 tsp. Lawry's Seasoned Salt 2 eggs slightly beaten
1-8 oz. can tomato sauce 1 can "Extra Hot" diced tomatoes
w/chili's, drained
Mix all ingredients except for 1/2 of the tomato sauce and form into
a loaf pan. Top with the remaining tomato sauce. Bake at 350 for 45
minutes or until done. I also use 1 small drained can of mushrooms in
the loaf because my husband likes them in about everything but they
are not necessary. As soon as I remove the loaf from the oven, I
drain off any excess grease from the loaf pan to keep it from
reabsorbing into the loaf.

Old-fashioned Meat Loaf-AKA "Basic Meatloaf"
Difficulty: Easy
Prep Time: 10 minutes
Cook Time: 1 hour
1 pound ground beef
1 1/4 teaspoons salt
1/4 teaspoon ground black pepper
1/2 cup chopped onion
1/2 cup chopped bell pepper
1 egg, lightly beaten
8 ounces canned diced tomatoes with juice
1/2 cup quick-cooking oats
Topping:
1/3 cup ketchup
2 tablespoons brown sugar
1 tablespoon prepared mustard
Preheat oven to 375 degrees F.
Mix all meatloaf ingredients well and place in a baking dish. Shape into a loaf.
Topping:
Mix ingredients for topping and spread on loaf. Bake for 1 hour.
FOR THOSE THAT PREFER GRAVY INSTEAD OF TOMATO BASED SAUCE:
Mom's Meatloaf
Prep Time: 12 minutes
Cook Time: 1 hour 45 minutes
2 teaspoons butter
3/4 pound ground beef
1/4 pound ground pork
1 cup minced onions
1/2 cup minced green peppers
1 tablespoon chopped garlic
2 eggs
1/2 cup heavy cream
3/4 to 1 cup bread crumbs
Salt and fresh ground black pepper
2 cups veal stock
2 tablespoons flour
2 tablespoons water
Preheat the oven to 350 degrees F. Grease a roasting pan with the butter. In a mixing bowl, add beef, pork, onions, peppers, garlic, eggs, cream, and bread crumbs. Blend thoroughly. Season the mixture with salt and pepper. Shape the mixture into a loaf and place on the prepared pan. Pour the stock over the top and place in the oven. Place in the oven and bake for about 1 to 1 1/2 hours, basting occasionally. Remove the pan from the oven. Using a long spatula, remove the meat loaf from the pan. Place the roasting pan on the stove, over high heat. In a small bowl, whisk the flour with 2 tablespoons water. Whisk the slurry into the gravy. Bring the liquid to a boil and cook for few minutes, stirring constantly. Season the gravy with salt and pepper. Slice the meatloaf in to 8 pieces. Serve two slices of meat loaf per person with a spoonful of gravy.

Why do I love meatloaf? It reminds me of being a kid. Where else does one get meatloaf other than at home or a school cafeteria? That and I often buy it already mixed at our fabulous local butcher. So all you have to do is add an egg and put it in a baking pan and plop it in the oven for an hour. But what if your butcher hasn't made up a batch? It's easy enough to make. Here's a recipe we use for traditional meat loaf. The ingredient that makes this meat loaf extra delicious is the spicy ground pork sausage. We once substituted this sausage for regular ground pork and have never looked back.
1 cup of finely chopped onion
1 celery rib, chopped fine
1 Tbsp minced garlic
1 carrot, chopped fine
1/2 cup of finely chopped scallion (can substitute onion)
2 Tbsp unsalted butter
2 tsp salt (use 1 1/2 teas if using Italian sausage)
1 1/2 tsp freshly ground pepper
2 tsp Worscestershire sauce
2/3 cup ketchup
1 1/2 pounds of ground chuck
3/4 pound of spicy ground pork sausage (or use Italian sausage - 1 sweet, 1 hot)
(NOTE: many versions of meatloaf call for ground veal as well. I would experiment with a third each of beef, pork, and veal.)
1 cup fresh bread crumbs
2 large eggs, beaten slightly
1/3 cup minced fresh parsley leaves
Italian sausages.

Preheat oven to 350 degrees F.
In a large heavy skillet cook the onion, garlic, celery, carrot, and scallion in butter, over moderate heat, stirring, for about 5 minutes. Cover and stir occassionally until the carrots are tender, about 5 more minutes. Stir in salt and pepper, Worcestershire sauce, and 1/3 a cup of ketchup. Cook for 1 more minute.
In a large bowl, combine the meats, eggs, bread crumbs, vegetables, and parsley. Form into a loaf and put into a retangular baking pan with 2 inch high sides. Cover loaf with remaining ketchup.
Bake meat loaf in oven for 1 hour.
Serves 4 to 6.

why meatloaf of all things? okay, here you go:
2 pounds lean ground beef
2 cups fine dry bread crumbs
1 tsp. sage
1 tsp. salt
1/2 cup milk
1/4 cup chopped onion
1/2 tsp. pepper
1 egg
.
Dressing:
1/2 cup chopped celery
1/2 cup butter
1/2 cup chopped onion
1 small can mushrooms, drained
1 cup bread crumbs
1/2 cup chopped parsley
PREPARATION:
Mix meatloaf ingredients and put half into loaf pan. Brown all dressing ingredients together then top the meat mixture in pan. Add rest of meat mixture. Bake at 350° for 1 hour 15 minutes. Can be frozen ahead of time and then baked 2 hours.
VARIATION: you can also mix 50/50 ground beef and ground pork for a more moist version.

This is my husband's favorite recipe. Hope this helps.
Ingredients
l lb ground sirloin
2 slices bread crumbled
1 quarter onion finely chopped
2 garlic cloves grated
small amount of dried Chili flakes
1 tsp salt
1 egg lightly beaten
10 pieces of double smoked Bacon
Method
In a skillet add some 2 tbs olive oil, and fry up the onions, garlic and chilli flakes. (Put a side to cool).
Once cooled add meat and mix everything together. Add bacon on top of loaf.
Bake 45 minutes at 350 degrees F (175C), remove simple meatloaf from the oven. Serve with rice, potatoes or noodles. top.
Return to oven for another 15 minutes.

This is the best meatloaf just dont forget to drain the pan half way through cooking.
INGREDIENTS:
1 1/2 pounds lean ground beef
1/2 cup crushed buttery round crackers
3/4 cup shredded Cheddar cheese
1 (1 ounce) package dry onion soup mix
2 eggs, beaten
1/4 cup ketchup
2 tablespoons steak sauce
--------------------------------------------------------------------------------
DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, stir together ground beef, crushed crackers, cheddar cheese and onion soup mix until well combined. In a separate bowl, stir together eggs, ketchup and steak sauce until smooth. Stir the egg mixture into the beef mixture, adding a little water if necessary. Shape into a loaf and place in a 9x5 inch loaf pan.
Bake in preheated oven 45 to 60 minutes, until no longer pink.

Here's a good quick and easy. 1 pd. ground beef, 1 egg ,1 packet Lipton onion - mushroom soup , and i find oatmeal actually works better in all my meatloaf recps. add some plain ol ketchup,shape into a loaf, make a lil trough in the center..not too deep and then sprinkle on a lil of the oatmeal squirt w/ some ketchup and bang.. it's a really good "cheat" recp.
Oatmeal doesn't take away from the flavor as much or tend to make it too dry

1 onion (I like to puree it in blender)
1/2 bell pepper also puree
garlic minced
1 egg
Italian style bread crumbs ( i usually just add to make it stay together)
mix together and shape into loaf, put into pan and then I pour Hunts tomato sauce w/ green label it has roasted garlic, oregano and basil bake in preheated oven at 350 degrees for about 1 hour.
ps I have also placed smoked sausage on top then pour the tomato sauce.
My family loves it.
