1.5 lb ground beef, 1/2 c bread crumbs, 3/4 can condensed tomato soup, 1/2 a pouch of onion soup mix, 1 egg. Mix everything and make at 350 degrees for 1 hour or until 160 degrees. New potatoes with parsley make a great side.

2 lbs hamburger
2 eggs
1 cup oatmeal or bread crumbs
2 tablespoons Worcester sauce
basil, oregano, chili powder - about 1 tblsp of each
chopped onion (if you like...chopped fine for flavor)
mold your meatloaf into pan
cover the top in a layer of catsup, and sprinkle a fine layer of brown sugar on top of that.
Bake until done - sauce may burn a tad around edges, depending on the heat of your oven.

You really can add almost anything you want to in a meatloaf, but when you have to eat it, don't go too bland, that stuff has to have flavor to it lol.
Potato is the best side dish, with some type of vegetable. I prefer baked potato (with sour cream), but my kids prefer mashed with gravy. Veggie is up to you.

Have fun! Lots of good recipes.

Couple pounds of hamburger, lipton onion soup mix, 1 egg, 2 pieces of bread, and seasonings that you like. Mix it all together, put some ketchup on top, put it in the oven and you've got yourself a meatloaf.
When you put the meatloaf in the pan you could cut potatoes up or some carrots and bake it all together. This could be your vegetable with your meat. Add a salad.

1 cup of finely chopped onion
1 celery rib, chopped fine
1 Tbsp minced garlic
1 carrot, chopped fine
1/2 cup of finely chopped scallion (can substitute onion)
2 Tbsp unsalted butter
2 tsp salt (use 1 1/2 teas if using Italian sausage)
1 1/2 tsp freshly ground pepper
2 tsp Worscestershire sauce
2/3 cup ketchup
1 1/2 pounds of ground chuck
3/4 pound of spicy ground pork sausage (or use Italian sausage - 1 sweet, 1 hot)
(NOTE: many versions of meatloaf call for ground veal as well. I would experiment with a third each of beef, pork, and veal.)
1 cup fresh bread crumbs
2 large eggs, beaten slightly
1/3 cup minced fresh parsley leaves

Preheat oven to 350 degrees F.

In a large heavy skillet cook the onion, garlic, celery, carrot, and scallion in butter, over moderate heat, stirring, for about 5 minutes. Cover and stir occassionally until the carrots are tender, about 5 more minutes. Stir in salt and pepper, Worcestershire sauce, and 1/3 a cup of ketchup. Cook for 1 more minute.

In a large bowl, combine the meats, eggs, bread crumbs, vegetables, and parsley. Form into a loaf and put into a retangular baking pan with 2 inch high sides. Cover loaf with remaining ketchup.

Bake meat loaf in oven for 1 hour.

Serves 4 to 6.

INGREDIENTS:
1 1/2 pounds lean ground beef
1/2 cup crushed buttery round crackers
3/4 cup shredded Cheddar cheese
1 (1 ounce) package dry onion soup mix
2 eggs, beaten
1/4 cup ketchup
2 tablespoons steak sauce

--------------------------------------------------------------------------------

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, stir together ground beef, crushed crackers, cheddar cheese and onion soup mix until well combined. In a separate bowl, stir together eggs, ketchup and steak sauce until smooth. Stir the egg mixture into the beef mixture, adding a little water if necessary. Shape into a loaf and place in a 9x5 inch loaf pan.
Bake in preheated oven 45 to 60 minutes, until no longer

Dont forget to drain the grease half way through cooking. This is the best meatloaf that I have tasted.

I use ground meat, cracker crumbs or bread crumbs, eggs, & spices. Use as much crumbs and eggs to make it stick but not dry. You can add ketchup or bbq sauce to the top. I usually have mashed potato's and corn. A rice side dish would be good too. Enjoy.
