here's i good one for boneless chops that i recently tried out:
rub the pork chops with some salt and pepper and let sit, covered in the fridge for up to 30 minutes.
then pour a cup of breadcrumbs and half a cup of grated parmesan into a ziploc bag. beat 2 eggs in a separate bowl. dip each pork chop in the egg, then place in the ziploc bag and shake to cover with breadcrumb mixture. when you're done, grill the pork chops about 6 minutes on each side.
this recipe is really quick and easy. coating the chops helps seal in the juices so the meat isn't all dried out.

One of my favorites with Pork Chops:
Put about 2 TBSP of Crisco Oil in a skillet and bring it up to temperature until the oil begins to sizzle. Turn the heat down to about Medium (electric) or about half flame on gas. Cook the chops (I prefer them to be about 1/2" thick) until tender and brown on both sides (do not overcook!). Remove skillet from heat and blot out excess oil (if any) with a paper towel. Pour a can of Cream of Mushroom soup and about 1/4cup water over the pork chops (sized for 4 chops). Simmer on low heat until the soup thickens. Cover and allow to stand about 10 min. before serving.

I like to marinade them in a mixture of
1 tablespoon dark soy sauce
1 tablespoon Worcester Sauce
1/2 teaspoon mustard powder
1/2 teaspoon paprika
1/2 teaspoon balsamic vinegar
sprinkle of dried mixed herbs including sage
1 bay leaf
1/2 teaspoon chili powder
Mix all the ingredients thoroughly and pour over the chops in a bowl. Turn every ten minutes or so to ensure they are fully coated and leave to soak as long as possible, overnight is preferred. Grill under medium heat, turning the chops every few minutes and use the remaining marinade to baste them as they cook.

add garlic gloves (or sprinkle powder on PCs)
brown both sides of pork chops
add water to pan, cover and simmer 35-45 min
for the most tender pork chops ever
Serve with rice, or rice a roni...
GOOD LUCK
