Now my husband works from home but when he used to go to the office, I used to pack him different things for lunch. The thing he liked most was: a sandwich, a water bottle (or a juice pack), a fruit, and maybe a muffin or a granola bar. If you don't want to repeat sandwiches, you can try different things on it like peanut butter (if he is not allergic), tuna, scrambled eggs, baked chicken or fish fillets. On days he did not take sandwiches to work, I would pack him a pita wrap filled with vegies (tomatoes, carrots, lettuce, green bell pepper) and grated cheese, with ranch sauce (on the side, so it wouldn't make his pita bread soggy until lunch!) Since your hubby has a cooler, you can even pack him a fruit bottom yogurt, my husband loves those! It'll give him one serving on calcium for the day! These ideas aren't hard at all, and if he leaves early in the morning for work, you can always prepare it the night before and put it in the fridge for him to grab and go. These are some of my ideas. Pasta salad

Deli meat & cheese wrapped up in a tortilla (wraps)
Veggies and dip
Meatloaf sandwiches
Boil a chicken. Shred the meat and use for salads & sandwiches. Use the broth for soups.
If you take a few minutes to prepare as much as you can once a week it should lighten your daily load

You can do a few Wrap-Sandwiches and have some fruit with them.
My fav wrap is turkey slices, guacamole, ranch dressing, diced tomatoes, and bean sprouts on a toasted spinach tortilla.
Another good one is you can buy grilled chicken already cooked and diced in a bag in the cold cut section and squirt some greek dressing on it in a tortilla with some lettuce and cheese.
