Do something a little different and use ground turkey or deep-fry some small pieces of fish. Then put the fish in some tacos and put on some salsa.

I love chicken soft tacos. Here's how I do them.
1. Take your chicken meat skin and debone it'
2. Put the meat in a pan of water an steam-boil for about 15 minutes, make sure there is no red to the meat.
3. Drain the meat, let it cool and then shred your meat.
4. Put the meat back into the pot and add just enough enchilada sauce to cover your meat and let cook on a low heat.
5. In the mean time I cut my onions, cabbage, tomatoes, and put them in a bowl.
6. I grade my cheese and set it to the side.
7. I like sour cream, re fried beans, and taco sauce also so I set all of these items out.
8. Heat tortillas
I then put some of everything on the Tortola fold it and eat. From start to finish it takes about 45 minutes.

Ingredients:-
-12 corn tortillas
-1 lb. hamburger (1/2 kilo)
-1/2 c. flour
-1/2 tsp. salt
-1/4 tsp. oregano
-1/4 lb. grated mild yellow cheese
-3 c. tomato puree
-Oil for frying
-Shredded lettuce
-1 sm. onion, chopped
-Radishes, chopped (optional)
-3 tbsp. chili powder
Fry the hamburger meat in small amount of oil, with the flour and salt stirred in. Warm the tortillas if they break when handled. They can be wrapped in a cloth and warmed in a very low oven a few minutes. Or they can be fried enough to warm them in hot oil. Don't fry them crisp or they can't be folded. Spoon the hamburger on the tortillas and fold over. Fill the tortilla with shredded lettuce, onions, and radishes. Sprinkle grated cheese on top of the lettuce and the amount of sauce desired. A few drops of hot pepper sauce may also be added. Close the taco and serve while hot.
Taco Sauce: Heat the tomato puree, oregano, 3 tablespoons chili, oil, and a little water if necessary. Simmer a few minutes, stirring while it heats. The hot pepper sauce can be added to this sauce or each person can add to the filled taco, as he desires.

When I don't have any taco mix I just use salt and pepper and sometimes a little cumin. I know that taste of taco mix does get nasty after a while.

You can try this recipe, i love it... and my friends too!
I lb boneless chuck roast
1 clove garlic
1 ancho chile
a pinch of ground cumin
1/2 tsp ground oregano
salt to taste
1/2 cup beef or chicken broth
Place beef and the rest of the ingredients in a large pot. Cover and bring to a boil over high heat. As soon as it boils, reduce heat to a simmer and cover pot. Let simmer until beef is tender and shreds easily. Put 1 cup of broth in the blender with the ancho chile and the garlic clove and add it to the shredded beef.

Brown meat with chopped onions, add salt, pepper, powdred garlic, cumin and if you want a little chili powder and even some hot sauce or salsa.
Let it all simmer so the seasoning really gets into the meat.

Use some salsa instead of the mix....it's sooo good like that!
Brown your beef like you usually do.
Drain.
Add salsa.
Heat through.
Add to taco shell and pile on the 'fixins. :)

I have used a jar of salsa instead of the mix and it has turned out good. Also mix it when done with Zatarains red beans and rice to give it a different kick too.

Cut up some pork into tiny pieces. Cook it until crispy (it takes a while)
Add some salt and pepper
Serve with cilantro, diced onion, diced tomato and some mexican cream (not sour cream and not cheese)
