Delicious Indonesian Vegetable Salad with Peanuts


Serves 8

Ingredients:

5 cups cabbage, coarsely chopped
boiling salted water
1 package of 10 ounces French-style green beans
1 1/2 cups unsalted cocktail peanuts
soya sauce and lemon juice
1 can bean sprouts, drained, about 1/2 lb.
1 package of vegetable flavour chow mein noodles, cooked and cooled
1/4 cup sliced radishes
1/4 cup grated carrots
2 hard-cooked eggs (for garnish)
hot chilli peppers or banana peppers (for garnish)


Spicy Curry Dressing

1/2 cup light Italian vinaigrette
1/2 teaspoon curry powder
1/2 teaspoon Indonesian red chilli paste
honey to taste

Prepare the dressing first and set aside. Boil the water and add the noodles
and cook them according to directions. Add the eggs and boil ten minutes.
Then take them out and let them cool before shelling.

Next, change the water and bring back to a boil. Cook cabbage in water till
tender-crisp; drain and reserve water. Use a colander. Next, cook green beans
for about half the time of the cabbage. During this time, grate carrots, chop
cucumber and chop radishes

Chill both in fridge. Place peanuts in oven and brown lightly under the broiler.
Use a cookie sheet, lightly oiled. This can take 3 to 5 minutes. Do not let
burn.

Place cabbage on the bottom of a large oval deep platter or large bowl. Layer
green beans and bean sprouts. Flavour with soya sauce and lemon juice. Sprinkle
salt and pepper if desired. Add a layer of nuts. Then layer carrots, cucumbers
and radishes. Sprinkle nuts around edges to make a circular or oval design.
In the middle, place banana or chilli peppers and quarter eggs. Place around
edges.

Serve with dressing on the side.
