My boyfriend all of a sudden is taking a liking to broccolli. He hates veggies, but for some reason he is starting to eat broccolli. Does anyone have a good recipie for a side-dish that calls for very small pieces of broccolli. (I don't like it unless it's cut up small.) He loves cheese but I want more than just the ordinary "add some cheese" recipie. Anyone???

Brocolli Cheddar and Rice

2-3 cups cooked rice (if you use 3 cups, add additional can of soup)
1 bag frozen broc (cut/chopped)
1/2 cup fresh mushrooms chopped
Small Onion chopped
1 can cream mushroom soup
1 small jar of cheese whiz (microwave 30 seconds to 1 minute for easier stirring)

Saute in light butter all veggies until onions are tender, mix in remaining ingredients, place in medium to large cassarole dish (be sure to spray dish for easy clean up). Bake for 30-45 minutes until cheese is bubbly and slightly brown. It's wonderful. You can also add diced ham or chicken/turkey before placing in the oven to make a complete meal!

I can give you this, asI make it all the time. It is a pakistan dish. Take a small onion, fry it till browned, and add 1 tsp chlili powder, 1 tsp salt, and 1 tsp tumeric powder. Fry for a few minutes, then add the brocolli, and fry until all the water is gone and then add 3 or 4 cubed tomatoes and fry until all the water is gone and the tomatoes are dried up-looking, and then add 4 cubed potatoes and cover and simmer with 1/2 cup to 1 cup water. When the potatoes are soft, then it is done. Of course, you can play with the setting of the chili powder, and the salt, and you can also add other spices like cumin powder, pepper, but to much will overpower the flavor of the veggie and some spices just dont sit well with this veggie at ALL, lol so be careful. Good luck... Also, look on the goole for "saag"...it is a mixture of brocolli and I think it is another veggie and they are grinded and cooked together... I am not sure.

Cook some broccoli, and then cut it into small pieces. Put it into a bowl along with some bread crumbs, or even croutons. Mix with a can of mushroom soup (or 2 if it looks too dry) and add cheddar cheese or velveeta. Bake in the oven on about 375 for about 15 minutes, or until the cheese is melted and it is heated through. It will taste like cheesy broccoli stuffing.

(Sorry when I cook, I never measure anything. If you try it, just see what looks good to you!)

Here is a Chinese recipe for cauliflower I adapted to broccolli.

Chinese Broccolli with Almonds

Serves 4

2 tablespoons corn oil
1/4 cup natural almonds, sliced or flaked
2 tablespoons butter
1 medium broccolli, cut into flowerets and sliced 1/2 inch thick
water
3/4 teaspoon salt
soya sauce and lemon to taste
2 teaspoons cornstarch

Heat 1 tablespoon of oil in skillet. Add almonds and roast till golden. Remove from pan and set aside. Add remaining oil, butter and broccolli to pan; cook, stirring, over medium-high heat three minutes.

Add 1/2 cup water and salt; cover and simmer 5 minutes.

Mix cornstarch with 1 tablespoon water; stir into broccolli. Cook, stirring, till thickened. Turn into serving dish; sprinkle with roasted almonds. Season with lemon juice and soya sauce to taste along with salt and pepper.

Broccoli Cheese Soup! It's cut up really fine and tastes wonderful! It, too, is soooooooo easy to make in your slow cooker. Set it and forget it!

2 packages (16 ounces each) frozen chopped broccoli
2 cans (10 3/4 each) cheddar cheese soup, condensed
2 cans (12 ounces each) evaporated milk
1/4 cup dried minced onion (optional)
1/2 teaspoon salt
1/4 teaspoon pepper

Combine all ingredients in a greased 4 - 6 quart slow cooker. Cover and cook on high heat 2 - 3 hours or on low heat 4 - 5 hours. Makes 4 - 6 servings. Serve over a baked potato or garnish with bacon bits. Yum!

MMM ... broccoli is delish! Here's something really simple. Grade some carrots (thin slices), thin slices of broccoli, and onion (sz of your choice babe).

First place 1/6 cups of water in soup pot ... and 1/5 of a butter stick. As soon as the butter melts in with the water, give it a quick stir and throw in the butter ... let it steam for about 4 mins.

Then throw a quarter of butter in along with the rest of your veggies. Stir this until all the water has steamed into the veggies. Throw in a pinch of salt and pepper ... stir.

Make sure the carrots are tender and the broc is half way cooked. Turn the heat off.

Vwahlah! Delish veggies. He'll finish it!!

Broccoli Pepper - Side Dish


2 cups cut broccoli
2 TBS Olive oil
1/2 cut Chopped Red Bell Pepper
2 Cloves Garlic - Chopped

Heat Olive oil in a frying pan add garlic, broccoli and red bell pepper. Saute over medium heat for 12 - 15 minute or until broccoli is just tender. Don't overcook or they become mushy. Enjoy!!

Cheddar sauced broccoli

6 cups broccoli florets
2 Tablespoons butter
2 Tablespoons unbleached white flour
1/4 tsp dry mustard powder
Sea salt, to taste
1 cup low fat milk
11/2 cups sharp cheddar cheese, grated
White pepper, to taste

Directions
Step: 1Steam the broccoli until crisp tender, about 4 to 5 minutes. Meanwhile, melt butter in a medium saucepan.
Step: 2Whisk in the flour, mustard powder and salt to taste. Gradually stir in the milk, whisking over med-low heat until thickened.
Step: 3Add the cheese, stirring until completely melted.
Step: 4Season to taste with white pepper. Pour over the steamed broccoli and serve at once.

Broccolli peanut salad; broccolli, grated carrot, mayonaisse and peanuts. Seriously devine... oh you could stir fry broccolli in a black bean sauce or a lemon and ginger sauce. That's good too

Broccoli casserole

2 (10oz) pkgs of frozen broccoli (chopped or spears cut up)
Sm. pkg of Velveeta cheese cubed
1 stack of Ritz crackers (crushed)
1/2 stick of butter melted

cook broccoli for 1-2 min. until thawed. Put in oven-proof casserole dish. Add cheese and mix. Top with crumbs mixed with butter. Bake covered for about 20-25 min in 400 degree oven
