3 cloves garlic, peeled

1 cup grated Parmesan cheese
1-2 Tbsp. water
PREPARATION:
Place basil, garlic, cashews, and cheese in food processor. Start processing, and add olive oil in a steady stream. Process until a paste is formed. Add a bit of water if necessary to form the correct consistency.

Arugula Pesto:
Spread 3/4 cup chopped walnuts in a baking pan; bake in a 350° oven until golden under skins, 6 to 8 minutes. Let cool slightly. In a food processor or blender, working in batches if necessary, combine 1 pound rinsed arugula leaves (about 10 lightly packed cups), the toasted walnuts, 1/2 cup grated pecorino romano or parmesan cheese, 1/4 cup lemon juice, 1/4 cup extra-virgin olive oil, 1 1/2 teaspoons chopped garlic, and 1/4 teaspoon salt. Pulse motor a few times, just until mixture begins to come together. With motor running, slowly pour 1/4 cup more extra-virgin olive oil through feed tube or top of blender and whirl until mixture is smooth. Add more salt and fresh-ground pepper to taste.
Yield: Makes about 2 1/2 cups

Pesto can be made with parsely or basil. You ad either or to you food processor then you ad pine nuts parmisiano cheese and garlic. Turn on processor and stream in olive oil until it forms almost into a thick sauce. Whetever you do don't heat it up the basil will turn black and ruin the pesto sauce. good luck.( salt & pepper to taste)

The ingredients in pesto are Basil ( or spinach=Fresh not canned), walnuts, olive oil, and parmesan cheese. Oh, and some salt. Olr you can buy it from a shop like Trader Joes.

1 cup of fresh basil leaves. 4 teaspoons olive oil. 1 teaspoon pinenuts. 2 teaspoons minced garlic. 1 cup parmesan.
Put all but the parmesan in a blender or food processor. After it's a nice paste, mix in the parmesan and pepper to taste. Toss it with your favorite pasta, or use it as a pizza sause. MMMmmmmmm.

Fun and easy. Lots of basil leaves, clean and dry. Put them in the blender with pine nuts (ideally, but they're expensive so I substitute other nuts... almonds work well but if raw chop them before putting them in the blender because they're hard), 1-2 peeled sections of garlic. Blend. Add olive oil (extra virgin is best). Then when it's all really chopped, add grated parm until it's the right consistency. I never measure, just play with it.

-1/4 cup of mayonnaise
-1/4 cup of sour cream
Method:-
In a blender or food processor, combine the basil, bread crumbs, Parmesan, almonds, and garlic. Process until smooth, scraping down the sides of the container as necessary. Add the mayonnaise and sour cream. Process to combine.
For a low fat version, use nonfat mayonnaise and nonfat sour cream
