Best way is to wash them quickly toss them in a fine grain salt toast them in the oven @ 400 just until you can smell them don't walk away it goes pretty fast .

One medium sized pumpkin
Salt
Olive oil
1 Preheat oven to 400°F. Cut open the pumpkin and use a strong metal spoon to scoop out the insides. Separate the seeds from the stringy core. Rinse the seeds.
2 In a small saucepan, add the seeds to water, about 2 cups of water to every half cup of seeds. Add a tablespoon of salt for every cup of water. Bring to a boil. Let simmer for 10 minutes. Remove from heat and drain.
3. Spread about a tablespoon of olive oil over the bottom of a cookie sheet, or spray well with Pam or that type of product. Spread the seeds out over the cookie sheet, all in one layer.
Bake on the top rack for 20 minutes or until the seeds begin to brown. When browned to your satisfaction, remove from the oven and let the pan cool on a rack. Let the seeds cool all the way down before eating. Either crack to remove the inner seed (a lot of unnecessary work} or eat whole (which is the way most people enjoy them).

Fresh pumpkin seeds
Vegetable oil or cooking spray
Salt
Steps:
1. Separate the seeds of a freshly carved pumpkin from the stringy membrane. Rinse the seeds just until they are free of any membrane matter.
2. Heat the oven to 350 degrees F.
3. Put the seeds on a paper towel and let them dry for a few minutes.
4. Spray a baking sheet with butter-flavored nonstick cooking spray or brush with a light coating of vegetable oil. Put the seeds on the baking sheet in a single layer, turning to coat lightly with the spray or the oil. Sprinkle the seeds lightly with salt, if desired.
5. Put the baking sheet in the oven. Cook the seeds for 10 to 20 minutes, or until brown and slightly crisp, turning once. Allow to cool before eating.
6. Store seeds in an airtight container.

clean the pumpkin guts off the seeds and place them on a cookie sheet ,lightly spray with veggie spray and sprinkle with salt..put in a 325* oven for about 10 minutes ~ every once in awhile mix them and flip them with spatula and keep heating for 10 min...when they look golden brown or close to it..they are done...

the way i make them is i clean them off and then i spread them out on a cookie sheet. i like to salt mine and then i put them in the oven @ 400 degrees until they are slightly brown. good luck
