Peach Cobbler

Cobbler Filling
2 cups peeled and sleced fresh peaches
1/2 cup sugar
1/2 teaspoon cinnamon
1/2 teaspoon vanilla

Cobbler Crust
1 cup flour
1 teaspoon baking powder
3 tablespoons sugar
4 tablespoons unsalted butter
2/3 cups of milk

Preheat the over to 400 degrees F.
In an shallow baking dish, add the peaches and cover with sugar, cinnamon and vanilla. Mix together and bake for 10 minutes.
Mix together in a separate bowl, all the dry ingredients for the cobbler crust. Cut in the butter with your fingers. You should end up with a coarse texture. Now add the milk and combine until you form a soft dough.
Remove the peaches from the over and carefully spoon the batter over the top of the fruit. Do not stir. The batter is going to form a delicious crust topping over the peaches.
Bake for 20 to 30 minutes until the fruit is bubbly and the crust is a nice golden brown.
Serve with homemade whip cream or vanilla ice cream. If you are counting calories, skip the topping and just go with the cobbler.

Apple Filling
5 cups tart apples, peeled, sliced
3/4 cup sugar
2 tablespoons flour
1/2 teaspoon cinnamon
1/4 teaspoon salt
1 teaspoon vanilla extract
1/4 cup water
1 tablespoon butter, softened

In a medium bowl, combine apples, 3/4 cup sugar, 2 tablespoons flour, cinnamon, 1/4 teaspoon salt, vanilla and water. Turn into a lightly buttered 9-inch square pan. Dot apples with 1 tablespoon butter.

Make the crust the same as you would for the peach cobbler.

Easy Peach Cobbler
Submitted by: Rebecca Lentz
"This is a quick but company-worthy cobbler. So simple, yet wins rave reviews. If desired, use 2 (32 ounce) cans of peaches in place of fresh peaches. If doing this, use peach syrup instead of water and then omit the white sugar from recipe. Also, yellow cake mix can be substituted for the white."
Original recipe yield: 12 servings.
Servings:12 (change)

INGREDIENTS:
12 fresh peaches, pitted and sliced
1 cup water
1 cup white sugar
1/2 teaspoon ground cinnamon
1 (18.25 ounce) package white cake mix
1 (8 ounce) package cream cheese
1/2 cup butter

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
Spread peach slices evenly into a 9x13 inch baking dish. If using canned peach juice, pour 1 cup of it over peach slices. If using fresh peaches, combine water and sugar in a small bowl. Stir to dissolve, then pour mixture over peaches.
Sprinkle cinnamon over peach slices, followed by dry cake mix. Top cake mix with pats of cream cheese. Dot cobbler with butter or margarine.
Bake in preheated oven for 45 minutes, until golden
