My great-aunts used to maked this toasted bread thing for me. Actually it was a cookie for me. How do you make rusk??

Try this:-

1 pint of warm milk, 1/2 cup of yeast or 1/2 cake of dried yeast.
Mix sufficient flour to make a thick sponge; when light, work in 1 cup of sugar, 2 heaping tablespoons of butter, 2 or 3 well-beaten eggs, 1/2 teaspoon salt; add flour sufficient to mould.
Let rise until light, and then make into small balls. Arrange closely in a buttered tin, let rise again, then brush over with sweetened milk, and bake

Rusk

All that you need to make rusk is a timer that rings when it is time to remove the pieces from the oven.

- Slice a loaf of bread (preferably a small one to get rusk of the usual size) into quarter-inch thick slices. Make sure that the slices are all equal and no thicker than half an inch.

- Place the slices on a cookie sheet and toast them in a 150° F oven for 45 minutes. Flip them and return them to the oven for another 45 minutes.

- The pieces of rusk will turn a rich brown. They are ready to eat as soon as they are out of the oven.

- You can keep rusk in a plastic bag, preferably one with airing holes. To make them crispy again, put them in a toaster for 30 seconds just before serving.

Rub in half pound sugar, half pound butter, to four pound flour, add pint milk, pint emptins; when risen well, bake in pans ten minutes, fast.
