Unfortunately low fat Ceaser salads are rather grim. But if you must, use low fat yogurt or fromage frais as the base for the sauce, which you can then flavour as normal- anchovy, Parmesan and season. It has a much lighter taste this way, hope you like it.

Use a half-fat cheese, or reduce the amount of cheese and egg yolks.
In fact, don't make a caesar salad at all, make one with vegetables and no cheese or egg, see whether you can find any fat in that.
