my favorite is to mash them with milk, butter, and pepper, like you would a regular potato.
I also love sweet potato fries!
Sweet Potato Fries
olive oil, to coat
6 large sweet potatoes, peeled and cut into steak fries
2 teaspoons salt
garlic powder
cinnamon
1. Preheat oven to 425 degrees.
2. Put cut fries into large ziploc bag with olive oil, put in salt, garlic and cinnamon and shake to coat.
3. Place fries onto baking sheet leaving space between fries.
4. Put in oven for 10 minutes and then flip them over.
5. Place back in for 10 more minutes.
6. They should be soft on the inside and browned on the outside.
7. Let cool for 5 minutes.
8. You may also use regular potatoes or 1/4 packet taco seasoning to alter taste to your liking.
Leek, Potato & Sweet Potato Torte
1 tablespoon olive oil
2 large leeks, green trimmed off,washed well,sliced 1/2 inch pieces
1 tablespoon fresh thyme or 1 teaspoon dried thyme leaves
salt & pepper
1 lb sweet potatoes, peeled and cut into 1/8 inch slices
1 lb potatoes, peeled & cut into 1/8 inch slices
1. Have oven rack on lowest level, preheat to 450F Lightly oil a 9" deep pie plate, line it on the bottom with parchment and lightly oil the parchment.
2. Heat the tbsp of oil in a skillet and saute the leeks& thyme for apprx 5 minutes, watch they don't scorch, if necessary add a tbsp or two of water, remove from heat and season with salt& Pepper Arrange half of the sweet potatoes in the pie plate, have them slightly overlapping going around the plate ending up in the center of the pie plate- one layer but overlapped Season with salt& pepper Spread 1/3 of the leek mixture over the sweet potaoes Layer half of the potatoes in the same manner as the sweet potatoes Season with salt& pepper Cover with 1/3 leeks repeat with another final layer of potatoes Cover with remaining leeks, season with salt& Pepper Add final layer of sweet potatoes
3. Cover tightly with foil and bake for 45 minutes or until the potatoes are tender
4. To serve run a knife around the edge to loosen, invert onto a plate, remove parchment paper, slice in wedges& Serve.

How to Cook Sweet Potatoes
--------------------------------------------------------------------------------
Sweet potatoes were first introduced to the rest of the world when Columbus brought them over from the island of Saint Thomas. You can bake 'em, boil 'em, microwave 'em.... Just about anything you can do with a potato, you can do with a sweet potato. Below are four ways to go.
Steps:
1. Bake sweet potatoes in their jackets. Wash, cut off the ends and bake in a preheated 400 degree F oven for 40 to 60 minutes (depending on the size of the potatoes and how firm you want them to be). Bake the potatoes on a baking sheet; the sugars in the potatoes can drip out and burn on the floor of your oven.
2. Roast peeled chunks of sweet potatoes with onions in a 400 degree F oven for 40 to 60 minutes. Drizzle a little olive oil on the potatoes first.
3. Boil or steam peeled or unpeeled sweet potatoes, either cut into chunks or not, until tender. The time will vary depending on the size of the potatoes or chunks - from 5 minutes for small chunks to 30 minutes for whole potatoes.
4. Wrap peeled or unpeeled sweet potatoes loosely in plastic wrap (prick with a fork in a few places first) and microwave 10 to 15 minutes or until tender. (Use the Potato setting if your microwave has one.)
5. Mash cooked sweet potato and blend with butter and a little milk for a smooth puree. Add brown sugar plus cinnamon, cloves or ginger if you wish. A well-cooked sweet potato will mash almost instantly with just a fork.
Tips:
There are several kinds of sweet potato. You're most likely to see the light yellow, drier variety, and a darker, moister, sweeter variety, often mislabeled as a yam. You can use either variety of sweet potato, moist or dry, in recipes, but not both together, as they have different cooking times. The dry variety cooks more quickly than the moist variety.

This is my mom's recipe and its wicked good!
-Bake the sweet potatoe. I like to wrap in in foil, then put the foil wrapped potatoe in a metal pan with enough water in the pan to just cover the bottom(this keeps the potatoe really moist). Pop in the oven & bake.
-While baking the potatoe, take a about 2/3 cups of orange juice, and 1/2-1 shot of rum (depends on how many potatoes) & simmer on top of the oven at a low-med heat.
-Once the potatoe is done, remove from oven, remove foil & place on plate.
-Add about 1/2-1 teaspoon of OJ/Rum mixture, as much or as little butter as you'd like, then add mini marshmello's, & crushed walnuts.
SOOOOO GOOD!
You can also do this as a casserole, but instead of baking the sweet potatoes, cut them in halves or fourths & boil them with the skin on until tender. Remove the potatoes from the water & de-skin. Place in a buttered glass baking pan. Place all the above ingredients (except for the marshmello's) and bake at 350 for 10-15 mintutes. Then add the marshmello's and continue to bake until marshmello's are melted and have a soft brown ontop.

SweetPotatoes like Russets with their skins left on, because sweet potatoes are high in nutrition and sweet enough to eliminate the need for gobs of butter. Use somewhat smaller sweet potatoes that are uniform in size and dress them with a dab of butter (or leave plain) and add a smidgen of brown sugar or maple syrup.

It depends if you want them mashed ,baked ,boiled and then cooked with butter,brown sugar and pecans.
I am always watching my weight. I like to eat them because they are filled with vitamins and are good fiber if you eat the skin too. I take one, wash it and poke a few holes in it with a fork, and put it in the microwave. Your microwave usually says how long to cook potatoes. .Just check it half way through, as they cook faster then Idaho potatoes. Then I slice them in rounds and either eat them plain..they are very sweet plain.(or) You can put butter on them and sprinkle with brown sugar and cinnamon if you like the extra yumminess!

i always cook a sweet potato the same way i cook a normal one, they make a healthy chip. They are nice baked or mashed too.

I have two favorites:
Cut them thin and deep fry them to make sweet potato chips.
Make a cassarole with with mashed sweet potato & molasses topped with a mixture of butter, oatmeal, brown sugar, & pecans!
