These are a few of my favorites!!
Chicken Parmesan
Serves 6
1/3 Cup Parmesan cheese, grated
1/4 Tsp Italian Seasoning, crushed
6 (4 oz) Chicken Breast, boneless, skinless
1 Tbsp Unsalted Butter
1/2 Cup White Onion, diced
1 Tbsp All-Purpose Flour
1/2 Cup 2% Milk
1 (1 oz packet) Ranch Flavored Salad Dressing Mix
6 Slices Mozzarella Cheese
1/2 (10 oz pkg.) Spinach, frozen, thawed, drained
1 Tbsp Pimiento, chopped
Instructions:
Preheat the oven to 350ºF
In a small mixing bowl combine cheese, ranch salad dressing mix, and Italian seasoning. Roll chicken pieces in cheese mixture to coat lightly; set remaining cheese mixture aside. Arrange the pieces in an 8x8x2-inch baking dish. In a small saucepan cook onion in hot margarine until tender.
Stir in flour; add milk all at once. Cook and stir till bubbly; stir in drained spinach and pimiento. Place a slice of cheese and spoon the spinach mixture over the chicken; sprinkle with remaining cheese mixture. Bake, uncovered, for 30-35 minutes or until tender.

Chicken Pasta Alfredo
Serves 6
6 Qts Water
12 oz Fettuccine Pasta
2 Tbsp Peanut Oil
6 (4 oz) Chicken Breast, boneless, skinless
2 (10-3/4 oz can) Cream of Mushroom Soup
1 (20 oz bag) Frozen Broccoli Florets
3/4 Cup Parmesan Cheese, grated
Instructions:
Heat a large pot of water, over high heat. When water comes to a boil add the pasta and boil for 8-10 minutes. Drain; reserving 2 cups pasta water. Cut the chicken into strips (1/4''x1''); set aside.
In a large frying pan, over medium-high heat, add the oil and chicken pieces stirring frequently until golden brown.
In a medium saucepan, over medium heat, add the chicken pieces, sauce, 1/4 cup reserved pasta water, stirring frequently. Add the remaining pasta water into the saucepan and bring just to a boil, then add the broccoli. Cook for 1-2 minutes. Remove from heat.
Divide the cooked pasta evenly between serving dishes and top with chicken and broccoli mixture.

Crab Quiche
Serves 6
1 (8 oz pkg.) Louis Kemp Crab Delights, flaked
3/4 Cup Mexican Style Cheddar Cheese, shredded
1/2 (8 oz pkg.) Cream Cheese, cut into 1/4'' cubes
1/4 Cup Green Onions, sliced
1/2 Tsp Salt
1/2 Tsp Basil
1/2 Cup Heart Healthy Bisquick
1 Cup 1% Milk ''Skim''
1/2 Cup Eggbeaters
3 SecondsNonstick Cooking Spray
Instructions:
Preheat the oven to 350ºF
Mix the crab delights, shredded cheese, cream cheese, onions, salt, and basil in a medium bowl.
Coat a 9-inch pie plate with nonstick cooking spray and spread the crab mixture into the bottom.
Beat the remaining ingredients until smooth. Pour over the crab mixture and bake for about 40-45 minutes.
Serve immediately.

I was out of ideas this week too, I had lots of veggies in so decided to do roast veg and it was really nice, I should have made more as not enough for seconds, it was so easy, I put red, green and yellow peppers, chop them big, green beans, spring onions, chopped broccoli, new pots (a few) and thinly sliced carrots, a few whole mushrooms and courgette, all in roasting pan, sprinkled with olive oil, salt and black pepper a bit of basil and baked for 15 mins, 'twas really nice.

anything from the freezer or a box is usually pretty easy and not very time consuming...if you like beef it's always smart to keep a pound or two of frozen browned, ground beef on hand because you can just dump that in a pan with a hamburger helper or some spaghetti and sauce good luck and enjoy!

Red-Hot Sesame Spinach-Salmon Salad
Ingredients
dressing
1/4 cup thinly sliced scallions (about 2 medium)
1/4 cup soy sauce
1/4 cup rice vinegar
2 tablespoons water
2 cloves garlic, minced
2 teaspoons toasted sesame seeds
2 teaspoons toasted sesame oil
1 teaspoon chili paste Salad
2 teaspoons toasted sesame oil
6 scallions, trimmed and sliced into 1-inch batons (white and green parts)
3/4 pound shiitake mushroom caps, sliced
3 cups corn, fresh from cob
nonstick cooking spray
6 (4-ounce) salmon fillets, about 1 1/2 inches thick
1 1-pound bag cleaned spinach leaves
3 cups bean sprouts
2 sweet red peppers, cored, seeded and thinly sliced
Directions
Preheat broiler. Whisk together dressing ingredients in a small bowl. Set dressing aside.
To make salad, heat sesame oil in a large nonstick skillet over medium-high heat. Add scallions and mushrooms. Sauté for 6 minutes. Stir in corn, cover and remove from heat.
Spray each salmon fillet with nonstick cooking spray. Place on a foil-lined baking sheet. Broil 8 minutes or until salmon is juicy and just cooked through.
Divide spinach, sprouts and peppers among 6 plates. Top with an equal portion of warm mushroom mixture. Slide a spatula under each piece of salmon (skin may stick to foil) and place atop mushroom mixture. Top with dressing and serve immediately.

Hot open faced roast beef sandwiches:
Sliced bread
Deli roast beef
Can/jar beef or mushroom gravy
salt, fresh ground pepper
Microwave the gravy until hot, stirring as needed.
Lay a slice of bread on a plate, then arrange several slices of roast beef, curling and folding them.
Pour gravy to cover sandwiches, then salt/pepper to taste

Stouffers has a nice vegetable lasagna that you can pop in the oven while multitasking on the other things you need to get done around the house or with your family...its super freakin yummy and already made for you...all you have to do is bake and serve.

either a healthy salad or u could make a nice pasta dish
3 tins chopped tomatoes,
2 cloves garlic,
matissions frankfurter chopped,
onions chopped,
mushrooms chopped,
bacon ripped up,
sweetcorn.
simmer till the bacon is cooked then boil some pasta and mix all together is lovely

Spaghetti bolognaise. Add mushrooms and onions to bulk it out. if spaghetti is too boring for you, use shells or twists as well as or on its own. It's quick, easy, and delicious. I'm making myself feel hungry and now i have a strange craving for spag bol
