The fat in any dry good can and will become rancid after time, even if the packaging is never opened. Rancidity usually occurs well after the "sell by" date, though.

Many croutons have some form of oil in them and after a certain amount of time the oil turns rancid and give the croutons a bad taste. I hope that this was some help.

Never mind about sell-by dates on croutons, what about ice cubes? They have one as well. And natural mineral water that has dripped through a mountain for 1000's of years!

even on honey there is a "best before" date... and honay is one of the only food that is always good...
but the law said that a date is necessary on every food... same thing for croutons I guess...

I guess they might go soggy once the packet has been opened. Just about everything has a BB date on it nowadays, it's more to do with protecting the company than the consumer most of the time

I suppose they could go mouldy! Anyway, there HAS to be a sell-by date on all food items

They aren't stale - they're fried. They can go mouldy if kept for oo long.
